  1. Albie, There's another thread with lots of discussion of high-heat-vs-low-heat, convection-vs-conventional, etc. Makes me wish I had a rib roast aging in the fridge right now....
  2. Jaymes, I tried out a slight variant of your recipe at Thanksgiving. I used maple syrup rather than bourbon (half the family crowd loves bourbon but the others just hate it. I used Lyle's Golden Syrup rather than Karo just 'cause I'd never tried it and thought it might be interesting. The pies turned out great. Oh, and the pecans were from my Aunt's trees. I still have enough pecans to try another batch at Christmas. Maybe I'll sneak some bourbon into one of the pies this time.
  3. This reminds me of a series of step-by-step books published by Simon and Schuster in the early 80s. I have two of them: Classic Techniques of Italian Cooking by Giuliano Bugialli and Chinese Technique by Ken Hom. The latter is my nominee for out-of-print cookbook that should be republished. The recipes are useful enough, but the real value of the book lies in the clear, concise description of the process.
  4. Thanks for checking on the English edition, robert. I'm not surprised that there's no firm publication date, considering the history of the 1998-2002 volume (it's on Amazon UK! no it's not! etc.) 2005, eh? That's really going to test my resolve!
  5. Does anyone know when the English edition of 1994 - 1997 will be published? I was too impatient to wait for the English translation of 1998-2002 and bought the Spanish version (which I can barely read). I finally broke down and got the English one last week from J. B. Prince. I'll try to be more disciplined and wait for the English editions of the remaining volumes.
  6. Love how you're keeping the running count, Maggie. My 357 (with a big asterisk) books should put you closer to the 50K mark. I've been lurking on eGullet for ages but never saw fit to post (or join) until now. The asterisk applies to four boxes of cookbooks from my late mother's collection, which I haven't had the heart to open yet. Tejon's remarks about his grandmother's cookbook collection might inspire me to finally unpack some of those cartons of books, so I'll be adding to my count later.
