  2. I am SO glad to hear somebody else had problems with the flipping back and forth. My cheesecake looked perfect until I got it onto the other plate and there were huge holes in the top. I put them back on but the cake looked more like a mud pie that anything else. It tasted good and everybody loved it, but I was sadly disappointed with the way it looked. Thanks for the info on the potato loaves. I think I am going to try them this week. Oh, BTW, I totally agree with you on the plain NY style cheesecake. There is nothing like it! Ellen

  7. Last night for me was flan. I had a craving and made some. I ate two servings. I think I'll eat two more tonight.
  8. Okay, I'm feeling like a slacker. I didn't get the focaccia done this weekend (lots of drama around me right now). I plan on starting it tonight. The pizza rustica sounds great for the weekend.
  9. It's definitely a focaccia weekend for me. I am thinking that I will top with EVOO, roasted garlic, and parm. I could eat bread all day. I love all the pictures too. It makes me want a digital camera so bad. This was a great idea Seth. Thanks!

    The Jam Topic

    I always use fresh apricots because we have orchards all over the place here and fruit is so abundant and inexpensive in late summer/early fall. The biggest problem is finding enough time to can/freeze/etc. I also dry a lot of apricots - I wonder if I could hide enough of them from the kids to try them for jam? Good question.... All the dried ones are gone from last year's harvest, but maybe next year when I run out of jam. I can't wait until the apricot tree in the back yard grows a little so I can use those.

    They may be a little cliche, but I like them. Raspberry Peach jam and Apricot pineapple jam. Homemade wheat bread YUMMM!
  13. I made my tart today. I used whole wheat pastry dough and I don't think I'll do that again. It was okay and I'll certainly use the three disks I have in the freezer, but I think my family will like it better if I use white flour. I also forgot to put the jelly roll pan under the tart when it was cooking. It took longer to bake and didn't brown the edges as nicely as I would have liked. Don't get me wrong, though, it was very good and even my picky eater liked it. I am definitely going to be doing this one again.

    Grilled Cheese

    Potato bread. Medium cheddar. BACON. Cook the bacon to not quite done. Shred the cheese (more even meltability). Melted butter on both outsides only of bread. Bread, cheese, bacon, cheese, bread. Low and slow. No smashing please.
  17. Is that what they're for? I though they were just decoration. Though I have convinced my kids that I was sacrificing to serve THEM the best parts. (e.g. "no, no you have that lovely breast, I'll make do with these icky thighs...")

  19. You are relatively accurate in your synopsis. In Act Chapter 10 Peter did have a vision of animals and the Lord said, "Kill and eat." Peter refused because of his Jewish culinary traditions. The dream is actually about Peter preaching Christianity to the Gentile nations. It is more a matter of symbolism than the food per se, but it has been used by many Christians to justify the differences in eating habits. It is clear when studying the Bible, that Christ ate meat. He certainly ate lamb as this is a traditional Passover meal and the Bible makes it clear that traditions were followed for the Last Supper.

  21. I think that part of the problem here is in how we define "dominion." If you define dominion as "being able to do whatever I want without consequence or repercussion," that's one thing (IMO one very wrong thing). I think, however, if you take the Bible as a whole, you will realize that that is not the way God defines it. He certainly has dominion over us, and that definition is not how he exercises it. I think that dominion is synonymous with "stewardship." Meaning that we have a level of power and authority, but we also have a commesurate level of responsibility for those things. I think that when the Lord instructed us to love one another as He loves us, he was talking about ALL our areas of authority/responsibility. If we exercise our authority in the same way Christ exercises authority over us, eating or not eating meat becomes a personal choice, but it is done with thanksgiving and respect.

  23. Alright! Tart and Focaccia! My idea of heaven. Seth, I used my KA 5qt mixer and I used one speed slower than recommended. It got pretty warm but I was able to keep my hand on it the whole time. It didn't bog down and the dough was beautiful. I tried the higher speed for a minute but the machine had problems. Have fun and enjoy!
