Here's a recipe.

Please speak to me of pandan---we saw it listed as a flavour in a tin of those rolled "cigarette"-shaped cookies---sometimes called Pirouettes--- this weekend. There were chocolate and vanilla and hazelnut, and the pandan ones had a green-striped twist.

Is the flavour describable? Unmistakable like lemon or cinnamon? Or ethereal, and of itself and unreadable unless you've tasted it. Nut, spice, plant, leaves---what?

Googling things is second-best to a first-hand taster's words.

Aaah, Racheld, since you're no stranger to Mr Google, then I presume you've seen images of the pandan plant? No self-respecting Malaysian who cooks will be without at least one plant in their home. Think Msian dessert and the pandan leaf will almost undoubtedly feature as one of the ingredients. I'll give a stab at describing the fragrance...it would be 75% vanilla and 5% rose and 20% a sweet smell which I can't place :rolleyes: . It's the perfect match for food containing coconut milk and palm sugar.

Edit to put in a cautionary word: Please do not equate pandan essence from a bottle to be close to the real thing. It's far from it. I don't think I've come across any essence which has successfully mimicked the leaf's fragrance.

Today is a HORRID day. It's freezing and windy (The Netherlands is flat so ....).

This little boy from Brussels has gone far, hasn't he? Malaysians might recognise him in front of Atria Shopping Centre doing that exact same thing....

Has he visited Malaysia yet? When he does, he may want to stay!

I think Asam Laksa costs $4.95 or $5.95 at my favorite Malaysian restaurant in New York (Skyway in Manhattan's Chinatown).

No, he has never been to Asia . Honestly, I think he would hate it. He's such a Dutch farmboy (Like I said, he's not at all adventurous with food and that cancels a lot of Malaysia's charm!) and I reckon he'd die after a few weeks there (ie public buses are never on time, nor is there even a timetable-i think- stuff like that ) :rolleyes: But if I do stay here, we plan to go to Malaysia in June for vacation so that he can meet my parents and understand me better :biggrin:

I'd like us to move there but he has a contract (work) of at least another 2 years (which if he breaks ,he'd have to pay thousands of euros) and I think I'm more flexible in this sense than he is so it looks like the Netherlands is the only option . For now.

I'm a Singaporean, and it's really great to see a foodblog from someone in kinda the same position I'll be next year--I'm moving overseas, probably UK, to study.

By the way, have we seen a picture of you yet?

How could I have forgotten this!!

Sebas is going to Eindhoven to stay with his grandparents for a few days. Walter thought he'd make poffertjes for Sebas as a treat.

Poffertjes are cute but personally, well.. they're just mini pancakes ,aren't they? :hmmm: Poffertjes are eaten with a knob of butter and lots of confectioner's /powdered sugar.

The great space cake project.

oatmeal might mask any texture issues, or finely chopped nuts in the mix.

Re tastes... perhaps a heavily spiced cake would go well with/to mask the natural flavor?

Maryjane goes well in red sauce due to its oregano-ish flavor. its awful with chocolate (IMO).

PS you are very pretty. Lucky farm boy!

Further thoughts re your adventures into Alice B. Toklas brownies: my understanding is that the active chemicals of interest in cannabis are oil-soluble, so a lot of methods recommend a two-step process of first extracting those chemicals into a fat such as butter (by cooking the herb in that fat over gentle heat, straining, and cooling); and then using the infused fat in baked goods and other recipes. The straining step guarantees that there will be no herbal solids adding odd textures to the end-product.

Erm ... I hasten to add that this is all information readily available to any curious soul over the Internet. And the technique is related to those for other infused-fat products such as chile oil etc. Yep. That's how come I know this stuff.
