Thanks for the photos. They are great and you were able to take them on a crowded saturday!

I went on friday and when I arrived there were a lot of kids (6ish) but the crowds thinned out. I really liked Felichin's chocolate. I didn't spend to much time looking at the chocolatiers who have stores in NY since I've been to their stores already.

I did find the booth of the author of Chocolate Obession (he wasn't there to autograph the book I bought at he B&N table :sad: ) but they had some great chocolates. (I liked the burnt caramel they were sampling). The demo by Pierre Reboul was great! He did a chocolate snickers caramel in a chocolate tuile. After a while, I couldn't taste any more chocolate. It was overkill....

I ended up buying a 11lb box of chocolate from Guittard for my holiday chocolates and some cocobutter colorings from chef rubber.

Good catch on that recipe, it's amazing how many recipes don't get tested.

^Before you make this, don't you think the proportion of butter in both the tangerine cake and the chocolate cake (which is almost like a flourless chocolate cake) seem unnaturally high? It seems like 1/4 cup of butter is more than sufficient for the tangerine cake and the chocolate cake...I do caution that I've made a cake from the Lumiere book that didn't turn out at all--it was waaaaay too greasy (it looked like it contained too much butter when I read it, but I followed the directions anyway, and it was inedible).

Anyway, I think the cake would turn out if you cut the butter down to 1/4 cup in the tangerine cake (and even then it would be very dense with the almond meal) and 1/4 cup of butter in the chocolate cake (so it's more in line with other flourless chocolate cake recipes.)

Megan, your pictorial and text report on this event was superb! Thanks for bringing the Chocolate Show to those of us who can not attend in person!Currently sniffing the wrapper of an old Hershey bar to get the full gestaldt experience ... :huh: not the same, sadly ... :sad:
