Searching For A 20-Pound Brisket

Top-secret classified project this weekend, codenamed Operation Overkill.

I need a whole brisket - untrimmed, fat on, still vacuum wrapped from the slaughterhouse, the whole thing and not just the weenie point or flat you see idling in the display case at the grocery store. Anyone know where such a thing is available? Are there wholesale meat places 'round here? Where do I even begin on this quest? Who do I call? What shady man do I meet in a dark alley?

I'm talking about 20 pounds of meat here, folks. Could anything be more important?

I know this board is super restaurant-oriented, but I bet someone out there knows...

2 choices -

Butcher at Eastern Market.

Or call one of the Jewish delis up in Wheaton.

Or do what I do and suck up to the butchers at your local Whole Paycheck enough that they're willing to make extra special orders for you.

If someone writes a book about restaurants and nobody reads it, will it produce a 10 page thread?

I would call Costco (Pentagon City) and ask to talk to the meat department. I think they might have them, even though they cut and trim them themselves and repackage them for their meat counter. Ask them it they will sell you one whole, in the cryovac.

I think the Kosher markets may be your best bet. First try Katz's Kosher in Rockville, and if they don't pan out try Shalom Kosher in Wheaton.

I wonder if it's possible for that wonderful meat guy at Eastern Market to help you out, if the Kosher places fail ya.

Try Snider's Supermarket up in Silver Spring on Georgia - 301-589-3240 (press 3 for the meat dept - can ya tell I ordered ground lamb from them yesterday?). They have good selection, and I believe I saw a nice big brisket when I stopped in yesterday for my lamb. If they don't have what you want on hand, they can usually order it for you.
