I have been buying this at Costco and using it as a substitute for sugar when making desserts/baking with mixed success.  Can anyone tell me why it won't work for some things but it will with others?  For example, I have used it for cakes, no problem.  Today I tried making cookies and instead of the crispy cookies I was expecting, they came out hard but with a soft middle.  Plus they didn't taste like anything.  I do know you can't caramelize it, as I tried that.  Thanks!
