Marinated Tomato Salad

Serves 8 as Salad.

This is a tasty do-ahead salad.


cherry tomatoes or 4 to 6 small tomatoes quartered


package frozen artichoke hearts cooked


large green or black pitted olives sliced


sliced green onions


MARINADE


finely chopped garlic


salt


Dijon mustard


black pepper


fresh lemon juice


vegetable oil


olive oil


chopped parsley


If using cherry tomatoes pierce tomatoes with a sharp fork. Mix vegetabes together in a large bowl.

For marinade combine garlic, salt, mustard pepper and lemon juice; mix. Add oils slowly beating with a whisk or fork. Stir in parsley. Pour over vegetables and mix. Cover and refrigerate at least 12 hours. Stir occasionally. Recipe can be doubled and other herbs can be added to your taste.
