Lumberjack Cake

Serves 12 as Dessert.

This is a wonderful cake, best served slightly warm with a big dollop of whipped cream. Its' also fine served cold with a good coffee.

  • 185 g pitted dreied dates coarsley chopped
  • 1 tsp baking soda
  • 1 c hot water
  • 250 g caster sugar ( superfine)
  • 125 g butter softened and chopped
  • 1-1/2 c plain flour
  • 1 tsp vanilla essence
  • 2 apples peeled cored and diced
  • 1 egg beaten

Topping

  • 2/3 c soft brown sugar
  • 60 g butter
  • 1 c unsweetened shredded coconut
  • 3-1/2 T milk

Preheat oven to 180 C

Mix the dates with 1 cup of hot water and soda, and set aside while you make the remainder of the cake.

Cream the butter and sugar in a large bowl until light and fluffy. Slowly beat in egg.

Sift flour with pinch of salt and stir into mixture with vanilla.

Mix in date mixture and chopped apple. Tip into a 22cm lined cake tin. Bake for 40 minutes or until the top is set.

Put the topping ingredients in a small saucepan and stir over medium heat until well combined.

Remove the cake gently from the oven. Spread the hot topping over to cover the cake and cook for 20-30 mins longer or until topping is golden and cake is cooked through. Remove from oven and cool in the tin until ready to serve
