    My daughter, who estimates that she has made well over 100,000 coffees at work, showed me a new tamping method last weekend. Basically, you dose the basket as usual and then do a normal straight tamp (doesn't need to be high pressure). You then roll the edge of the tamper around the inside lip of the basket - I looked it up and this is called a nutating motion (think how a coin rolls around its edge before it settles flat).   3. I am visiting my in-laws who have a Francis Francis X1 espresso machine solely for the purpose of countertop art. To the annoyance of my FIL, I plan to make use of it while I am here and teach myself how to make espresso. I have found 95% of the parts for the machine and have purchased 1/4 lbs of espresso beans had them ground fine. I think the only thing I am missing is the tamper.   5. A wonderful thing happened today. Cafe Kubal opened in Eastwood, a neighborhood of Syracuse. Four blocks from our house. They're doing small batches of coffee in a 1904 roaster and serving a nice, basic set of coffee drinks and teas. They also serve pastries that are made by some Austrian guy in Geneva, NY. To get those pastries, they bring coffee beans to a customer in Weedsport and this person, who goes regularly from the Geneva pastry-maker's place to Weedsport, hands over pastries.   7. Hey all, Thought I'd inform those of you who travel through or to the Capital District are about a new coffee cafe called Mocha Blend Espresso Bar and Panini Cafe. It is located in Brunswick Plaza on Hoosick Rd. I have yet to check it out but then again I'm not a coffee expert as most of you on this site are. So what I think is good may taste like swill to you ??? But I'm just happy there is a place on my side of the river that MIGHT be worth frequenting??   8. I read this here: I've check Vitamin Cottage (the local chain of health food stores) and searched online. Looks like Matcha is pretty hard to come by -- I was only able to find VitaLife offering it and/or some Japanese brand of tea. Anybody know where to get matcha?

The Behmor 1600 This can roast up to 1 pound to a Full City roast. It has an afterburner to deal with the smoke and can be used inside on a countertop. I have no affiliation with Behmor or the inventor, Joe Behm. I have been home roasting coffee for about six years now, and just purchased a Behmor.   11. I had a Krups 12-cupper for a long time, 10 years maybe. It was working fine when I gave it away and bought a blue Cooks (Penney's) 12-cupper which is just OK. It cost $30 and I bought it because it's a pretty blue. However, 10 months later it is dead.   13. I'm starting to branch out a bit and get in to lattes and other non-press coffees. I've found that I enjoy lattes, but when I make them at home, I don't make a true latte. I've been using a Bialetti stove top for the coffee, and then heating an equal part milk in the nuker, frothing it with a cheap handheld device, and then pouring in the coffee. So, two questions at this point: 1. If I order out, what do I order that is equal parts milk and coffee? Lattes are 3:1 milk to coffee, correct? 2. How can I get a better froth without spending a ton of money? Thanks!
  14. I have a very old design 'La Signora' caffettiera and it needs a new rubber seal. Does anyone know of anywhere online that supplies replacement parts for stove top coffee makers? This coffee pot is a thing of real beauty (and makes a good cup of coffee) and I'm loathe to throw it out when the seal finally falls apart. Thanks.

  16. It's beginning to seem like a trend: self-styled "ultimate" home espresso machines custom designed for leading coffee equipment retailers. For example, Chris' Coffee Service's Andreja Premium and Whole Latte Love's Brewtus. The latest entry appears to be 1st Line's Project E1, with a pretty impressive list of specs once you get past the hype. Any word/thoughts on this machine?   17. I'm partial to getting my morning coffee fix at Dunkin Donuts (which, in the Fresser household, is called "Dunkie Donuts"), so a happy camper was I to see the new flavors they offer. You can choose from blueberry, chocolate, cinnamon, marshmallow and other flavors, even mixing up to three separate flavors in one cup. So far I'm hooked on a medium chocolate decaf. They even feature a "Flavorology" wheel that you can spin to determine your mystical flavor match.
  18. When I was in Chicago a couple of weeks ago, I bought a pound of Intelligentsia coffee. Was actually reading the bag yesterday, and it says to wet the paper filter with hot water before putting the coffee in. I had never heard of this, and wonder why they recommend it. All I could think of was that there was somehow less shock when the water hits it, but I'm just making sh*t up, so I'm turning to you all for the real answer!
  19. My dear old Gaggia Carezza has been around for nearly 5 years now, and over time it slowly degraded in performance. I finally got around to doing some invasive maintenence, disassembling the thing and cleaning out the boiler and replacing the gasket that seals the grounds into the filter handle. The machine is now totally revitalized, and making better coffee than it has in years. So, if your espresso machine is disappointing you, look into getting new gaskets and giving it a good cleaning. You'll not regret it.

  21. I find nothing -- but nothing -- about these, review-wise. I know no one who has one. Are they expensive or hard to maintain? Are they worth the $$; do they last? The company has been selling them for about 5 years, but I dont' know anyone, anywhere, who'se had experience with one.     bodum vac pot

    I've been craving a richer cup of coffee lately, so I've been using my Bodum vac pot for the last week or so. I haven't used one in years. I have a few questions. What kind of grind should you use? I've been using coarse. How long should you allow the coffee and water to brew before taking it off of the heat? Sometimes it boils, and sometimes it simmers. Does it matter? Thanks

Having never had tasted the quality of the coffee coming out of a Keurig machine, I couldn't understand why people would even think about buying a proprietary coffee dispensing system like the K-Cup, with such a diversity and abundance of Pod coffee on the market. Well, sometimes, proprietary standards also means higher quality and better technology -- and in terms of the quality of product the Keurig can produce, the proprietary system is totally justified.   24. When at "The Dirty Duck, aka The Black Swan, at Stratford-Upon-Avon, we enjoyed the most delicious sweetened iced coffee. When I asked how it was made, the manager said they used a product known as kemp, and that it could be found in British grocery stores. He said it was chicory (or chicory like). I could not locate it anywhere ( in the UK). The closest I came was buying chicory here in New York, but I could not in any way duplicate the drink I had enjoyed in England.
