@Nancy in Pátzcuaro, glad you are recovering and hope the ablation does the trick for you. My sis had one this week, too. I'm not sure she even had food while she was there. She had some complications and was in ICU for a couple of days.

Oh, it could have been really horrible. When you first said Big Mac taco, I was thinking you buy Big Macs and crumble them up into taco shells. That would have much too far! What you did doesn't look bad at all.

@Kim Shook That is some of the best-looking hospital food I've seen. So sorry you had to go through th is. It is amazing what coughing can do to us. Many years ago, my severe coughing fractured all my ribs. Definitely not fun. Got me to quit smoking!

I seem to recall being at an event or restaurant where they served olive oil ice cream that was quite tasty. A real surprise!

No photos, but a word of caution. I was re-heating some eggplant parm in the toaster oven at 350. I had it on the little baking pan with a piece of parchment. Thankfully I had just walked up to check on it when the paper went up in flames. I yanked it out and tossed it into the sink where I was able to get it out before a true disaster struck. Thankfully I had another piece of eggplant left to reheat (on foil, not parchment!!) but more thankfully, I happened to be right there when it happened. Had I not seen it when I did, I'd likely be looking at a partially burned house right now. NO PARCHMENT PAPER IN THE TOASTER OVEN!!!

I had that on a salad not long ago. Still have a can in the pantry if I'm not mistaken. Very tasty!

I did not take photo, but this is what I had last night, only instead of English muffin, it was on whole grain bread. I can't recall the last time I had a tuna melt and I really liked it with the horseradish. It was very satisfying. Horseradish-Cheddar Tuna Melt

Trying to work my way through the freezer and pantry--especially the "emergency" stuff. And improve my eating habits as a household of one. I defrosted a couple of chicken thighs and pulled out some old pantry items. Had some grape tomatoes on their last legs. I did not intend to put quite so much of the seasoning blend on this but my hands got out of control when I was sprinkling it over. It worked out fine because this turned out to be very tasty. I had never used canned potatoes before and wasn't sure how they would be. I remember buying them thinking they'd be good to keep on hand for emergencies--add a can of veggies and some stock and instant soup. But had not used them and they were expired so needed to get off the shelf and used or into the trash. I wouldn't want them on a regular basis, but roasted as I did this, I couldn't really tell they were canned. I thought I had a photo of it after being cooked, but apparently not.

I go to McD's about once every 10 years or so if that, so am no expert, but I have never heard of truffle angus burgers at any in the US. if they were here, surely I'd have seen ads.

@Ann_T, when you use the Romertopf to bake bread like this, do you soak it first or just use dry? I have one and I don't know why, but have just never thought of using it to bake my bread. Having a DUH moment.

A friend shared some wild onions he foraged. I roasted them with grape tomatoes. Added some spinach and bacon to top a baked potato. More fast food as I learn to cook healthy food for one. I have enough left for another meal.

We were having storms pass through and under tornado watch. I wanted something quick so I could eat and hunker down in the basement (It all passed south of us, thankfully, though round 2 is coming tonight.) So, Aldi fast food to the rescue. It was quite good actually. I did the egg rolls in the toaster oven. And that sauce is not a regular Aldi product, but it is very tasty. I need to pick up another bottle before it is gone.

Still trying to get the hang of cooking for one. A friend foraged some wild onions and shared with me. I roasted some with some tomatoes that needed to be used. Then used that with some ham (also on last legs), a tortilla, eggs and odds and ends of cheeses that were over-staying their welcome. Not pretty, but it was tasty and got a few things used instead of tossing them.
