Don’t know about SoCal but whole chickens here are mostly between 4 and 6 pounds Last one I got was slightly more than three pounds but that was from a different source.

That’s always an issue for me. KAF used to have a product called Quick Shine, I still have some and it works fairly well but doesn’t seem to be available any longer. Have you tried egg white? Neither milk or butter works for me.

It might be a good time to move up to a new Zo. I think they're fabulous machines, especially the dual paddle models. I have this one. Over the last thirty years I've had many different machines and this one is by far the best of the lot. Think Black Friday on Amazon.

Is it an older model? I just put all my ingredients into my Zo and press the dough option. In about 90 minutes the dough is ready, I shape it into my loaf pan (or other) let rise and then bake in the big oven. These days I don't use my KA at all for bread, the bread machine is so much easier with virtually no cleanup.

I used to have an extensive collection of this stuff too, but got rid of all but a couple pieces when we moved. I had way too much of everything. Now this house is filling up as well, just not with Tupperware.

In the oven now is my LeCreuset Brasier filled with Sicilian Baked Sausage. Italian sausage links, sliced sweet pepper (orange), onion, carrots, potato with s/p, dried basil and red pepper flakes. Poured over a can of Italian diced tomatoes. Smells yummy.

Coincidentally, I just copied this recipe that I saw on Food Network. It looked so good that I went in search of the prickly pear juice; of course I can't get that here. Found it on Amazon and it's in my cart now. Can't wait to try it.

Mine is the same; bought in the mid 70s it's a 5 qt. lift model Hobart. Still beautiful and works great, never needed service. Once when I bought an Electrolux Magic Mill I considered selling my KA. I'm so glad I didn't. My Electrolux is stored away since it's way too big for me now but that KA is still going strong all these years later. As a young married I tried so very hard to made bread. I was obsessed. Couldn't make a decent loaf to save my soul and had no one to teach me. Then I got my KA and everything changed, I was making wonderful breads. I guess it was all in the kneading.

This recipe for 1770 House Meatloaf arrived in my inbox this morning. As I've mentioned before, I love just about anything Ina Garten does (except she uses too much lemon for my tastes). I plan to resize the quantity to half and mix this up this weekend. I love meatloaf and especially made into sandwiches.

Best part is clean-up is a breeze...so much easier than a mixer.

My Zo (two paddle model) is wonderful for mixing and kneading. I just don’t bake in it.

@JoNorvelleWalker Several years ago I bought a big Bosch for bread-baking but returned it because it was too wimpy. Then I bought a big Electrolux that was great for big quantities. It is now in storage. For bread now I use either my 5-qt. KA or my Zojurishi Bread Machine. Both work great.

Beer (and wine) is sold in gas stations in Montana as well. And, up until 2005 open containers in vehicles were not illegal. Montana has a high rate of drunk driving,

I forgot about taking photos. The chicken was quite good; moist and tender, I cooked it for just about one hour. Found a box of Stove Top Stuffing in the pantry and made that to go with. A nice, simple meal.

I ran to my neighborhood IGA and bought the only whole chicken they had...just over 3 lbs. Then mixed up a wet rub of s/p, sage, thyme, rosemary and olive oil. into the fridge for about four hours then it’ll go into the oven. Not sure if I’ll use beer or wine. Since you say the beer doesn’t add anything,, maybe wine is best.

Inspired by the conversation on the Avance Grill with Rotisserie thread I’m going to roast a chicken on my vertical roaster in the oven tonight. Can’t stop thinking about it. Maybe it’ll convince me that I don’t need the PAG after all.

@JoNorvelleWalker, have you tried KAF's Bread Flour? Its protein level is listed as 12.75%.

I bough some of the Platinum yeast about a year ago and used one package. My results were less impressive than @ElsieD. I still have two packets left so I’ll try again. i don’t remember what I paid but it wasn’t anywhere close to $15.

I will never again put off all those little household chores that are easily done in small increments. I have been procrastinating for months. My car was 159 days overdue for its oil change when I finally took it in for service last week. Sunday I did laundry that overflowed the hamper until I started running out of clothes. I mopped the kitchen floor yesterday only because the plumber was coming and I was embarrassed. I vacuumed and dusted my bedroom on Saturday....oh it was needed so badly. I always seem to be able to put off these things until they are overwhelming. Never again.....
