Using up leftovers For tonight, braised short rib used in a taco. Cleaned and shredded the rib meat and cooked with green onions, cilantro and jalapeño made a salsa with mini multicolored tomatoes, green onions and cilantro and plated with avocado and lime leftovers preformed well as a new dish.

Leftovers as we prepare for a departure to Barbados to hang with a bunch of rum geeks for a week leftover grilled chicken with fresh made mashed potatoes and Caesar salad. I had recently purchased some Mexican crema which worked marvelously in the taters

We we always make matzah lasagna with the last box near the end of Passover. This year my wife shopped late and the only box of matzah available was gluten free. I took one taste and thought the box would taste better. Went straight in the garbage

The last two nights have been with extended family for Passover. My contribution to the meal was black-eyed peas and homemade gefilte fish. Pic of fish dish before garnish. Served with a horseradish and beet purée

@rotuts I have the same grill. Needs to be replaced. The wheels are gone and legs rotting out and on bricks but it still performs well.

I recently braised short ribs. The caramelization on the surface of the meat is difficult to replicate in a PC even if browned well prior to cooking under pressure

Picked up some beef short ribs yesterday from a discount market. As you can see some ribs are puny. Gave them a good browning on the stove and they are now ticking away in the oven

My range top is fueled with LP gas. No natural gas lines in my neighborhood and at the time we did our remodel, induction was not an option Works fine. The tank is I think 200 lb or 45 gal. The gas truck shows up a couple tims a year to keep it filled

Using up some fish purchased yesterday. This time Florida grouper Also trying to use up stuff in the fridge that needed using Made a salad with celery, carrots and green olives. Roasted carrots and brussel sprouts Pan seared grouper.

Sadly citrus is getting rare in Florida. Fungal infections have killed off a lot of orange and grapefruit groves

Should also add that you can eat all of the kumquat skins. Pith and all. Wish I had a basket to munch on right now
