  1. Chris, congrats on the new show. I have seen both of them now and appreciate the off the beaten path direction you are taking. Now I have a few places to try while the wife is at the casino. Man the gnocchi looked so good and I was envious you got to lick the gelato spoon. Look forward to the shows to come.
  2. I would have to say liver by your photo. Here is a picture of chicken anatomy.
  3. While a folded kitchen towel does work fine. An oven mit will give you more coverage and protect your arm from burns. Ove gloves are great and give you the dexterity that you don't get with mits. Don't ever grab a hot pan with a wet kitchen towel. Ouch!!!!
  4. being relatively new to polished stainless steel pans, I have used an array of different methods. BKF is the ticket for most things. Often a soiled pan can be soaked over night in hot water. The next day most food stuff will come right off. Dawn Power Dis solver work wonders on some more baked on stuff. I typically use BKF as the finishing method. If you get a haze from hard water, a little vinegar will remove it and bring the pan back to a high luster.
  5. I admit to frozen vegetables and tarter tots. I don't buy pre-frozen dinners. Tried them when our kitchen was being redone. We grilled out a lot after that experiment.

    Bananas

    The banana trees in my back yard are in full swing. The problem with a stalk of bananas is they all ripen at the same time. I cut one stalk down the other day before heading out of town. Today I am blessed with a few dozen ripe bananas. Besides banana bread and smoothies, anyone have good recipes that use a lot of bananas? I have a couple of stalks that will be ready to cut down in the next week. In the end I will end up freezing some and giving away a bunch.

  8. Bill, how low is low? An hour is pretty long for a thin cut of meat like skirt.
  9. Rant! I've never been to Alice's, but what's with the choice of salmon as the fish dish. Just my opinion, but If I'm in Key West I don't want turkey, no matter what time of year it is. I want to see fresh snapper, grouper, mahi or any other local fresh fish and shellfish on the menu.
  10. get side tracked while cutting up a butternut squash. Gash to the tip of the left index finger. No time for stiches at the time so I'm still covering the flap and it's 3 weeks now. It healing slowly without infection. I haven't cut my self in a few years and can't say this will never happen again but it's a bitch when it happens.
  11. My only problem with irradiated foods is not a fear from the irradiation but what to do with the radioactive waste. This is a big issue for me.
  12. Unlike the fine couscous that cooks in 5 min, the Israeli couscous needs to be cooked like rice.

    garlic bread

    Tonight I am making lasagna and garlic bread was in the picture. After reading the many suggestions I decided to take my french and cuban bread out to the grill and toast prior to adding the smear. My topping includes herbs from my garden; basil, rosemary, thyme, oregano and parsley as well as minced garlic, salt, pepper and a dash of crushed red pepper. This was mixed into softened butter and evoo and coated liberally onto the bread as well as the crust. I will wrap it all up in foil and bake just before serving.
  14. I have not made a sukkah the last couple of years. In years past I made some very beautiful ones with the walls made of palm fronds and the top covered in fronds and vines. Nice natural and green. Over the last few years I found my self alone in the sukkah. Kids and wife said it was too hot, too buggy and often we had rain this time of year and hurricanes the last couple of years. I just couldn't get in the spirit this year with that kind of attitude from the fam. As for foods in the sukkah, I like to lean toward the vegetables in season and things that are easy to carry outside. Stuffed squash is a favorite and when I last had a sukkah party I made kibbeh ades which is a vegetarian kibbeh made with red lentils and bulgur made in the same fashion as the raw kibbeh. These are often formed into a torpedo shape for finger food.

  16. I can vouch for the fact that the Rendezvous does not meet my idea of great BBQ. When I lived in Memphis in the late '78-82 we found a little hole in the wall called Lambs Eat Shop. BBQ pork shoulder cooked by Mr. Lamb and these 2 very old ladies that would slice it up. I remember one of the ladies falling asleep while she was slicing and then would perk up and continue. The pork was wonderful and that was a little slice of Memphis itself.
  17. Thanks Viejo. I don't get to Sarasota often enough since it is not much more than an hours drive but this gives me a reason to go. I just check out their website and the menu had me. I also find Bonefish boring!

    Horseradish

    Great tip on the vodka. I made "prepared" horseradish for our last Passover Seder and I can vouch for the eye watering experience. Just before going to find my scuba mask. regulator and tank gasping for fresh air, I remembered I have a pretty good kitchen hood and after moving to the range top I cracked that sucker on high. Ahhh much better.

  21. Do you remember the vegematic? This is the same thing reincarnated. Has some use but who really needs it. I vote useless crap that will get used a few times and take up space in the cabinet then sold at a garage sale, given away or take up space in a land fill. Did you see the boulder size dice on the commercial? I don't want my salsa looking like that.
