  1. You may want to try some blind tastings with your group as things progress . It doesn't get much more honest when samples are tasted blind
  2. Nice looking snappers basquecook and ravioli, impressive. Here are my two snappers which will feed us for several days My wife is not as much a fan of whole fish so these were broken down but everything will get used. I have the pressure cooker working a batch now with shrimp shells and will get another batch going without shrimp for those who keep semi kosher. Tonight I'm doing a repeat of a fish and shrimp soup I did recently. It wowed me enough to want it again
  3. Fantastic!! One stop shopping. I just bought an ear wax remover and hearing aids all for $40. Nothing getting by me now!
  4. The only rums I've had that are dry are agricoles
  5. I have cooked carrots a number of times and never run into this issue. Mine are vac-sealed with a Food Saver. So are mine but with the pad of butter when melted I developed an air pocket. I have gone to including a few whiskey stones in my veggie bags or using a pair of tongs to hold in place
  6. That punch being the rye For an off the shelf wheater that's easy on the wallet I'm partial to Old Weller Antique. A lot more flavor than Makers IMO Currently seeing 6 yr olds being bottled since there appears to be a shortage of BT wheated barrels with the Pappy crazy. This will blow over in another few years and well all be drinking better
  7. Mmmm, I'm tucking mine back in the box
  8. Thanks Anna. With your experience with different devices your assessment has more bite. Those are some significant short comings. In this battle of immersion circulators they are some clear winners and losers yet lots of room for improvement
  9. I need to try others' recommendations but have to agree I am not a fan of the big KY brands. And I had a horrible and expensive Japanese whiskey a few weeks ago at a bar on Whiskey night. What is it about the big KY brands that puts you off?
  10. Anna, can't wait to hear how it preforms
  11. I use to drink very little water a day until I recently had a small kidney stone which made me change my water consumption in a huge way. Now I try to drink 40-60oz of water a day
  12. Stop and reset
  13. Looks delicious
  14. Barreling a Manhattan can have some very good influences on the cocktail.
  15. I recently purchased both an 8L and 18L polycarbonate Cambro container. The lids are easy to cut and cheap so you can have an uncut lid if using the container for short storage See pics in the Anova thread
  16. Yeah I know. Thanks for the warning but have never had a problem. I keep it low key and obviously don't get wasted. Just some civilized sipping. But you are correct
  17. Try it uncooked and cold. No slimy texture
  18. Just wanted to add, it's amazing how many 2 oz bottles you can cram in a 1 qt. zip bag. I just ask for a bottled water to take high proofers down a notch and two cups during drink service. Three if my wife is drinking with me. Bless her heart, she can sip em neat right along with me!
  19. I like a good wheater. OWA being one of my favorite OTS bottles
  20. There is something very wrong here
  21. This was the med blade you can go finer
  22. You may already have a mandoline. Did this on a Benriner
  23. Has been at least 40 yrs since I put Jack to my lips. I take that back. While going trough my FIL's liquor cabinet, I found an Olr Taylor from the 70's and a bunch of Old Fitz from our wedding 1980. The Old Fitz is SW juice and a most recent find was an Old Crow from the 60s before they went metric. He also had a bunch of old JD which I passed on but did take a taste and confirmed my decision
  24. I bought my pound of beans for $30 and when I think of how long, soft and subtle they are compared to the 3 small scrawny dried beans sitting on most grocery store shelves for $10 I'm a happy guy
