  1. Im thinking the LunchLadies will be back somewhere on the Island. that's my vibe. and no need to light a candle in this case.
  2. @Auspicious "My mind is reeling a bit over the whole water tank concept for a fixed appliance.'' water that is destined to become steam might not have a lot to do water that is destined for Ice. many CSO work very very well of Combi-Cooking. plumbing in is a serious expense for a home user its not necessary for an over as for steam Fx very little water is used for steam cleaning , a different matter there is steam cleaning , which uses very little water and then there is Steam-Wash which commercial combi's use that uses a lot ow water and need a drain. get yourself a Cusinart Steam Oven and find out or review the extensive threads here.
  3. some exceptionally wider I hope they understand the implications.
  4. BTW as a few of you are following this thread out of curiosity [ed.: i.e. culinary voyeur-ism at its most blatant ] Im wonder how the issues were setteled ATK is a better show , except for the Twins shtick , and Milkstreet is not that bad either as it offers some non-american cooking
  5. it says use either hand is there a screen on both sides ? am I missing something ?
  6. @Toliver very interesting as far as i can tell the brio-hah based on the finical split between Ck and ATK must have been resolved the current owners of well ATK have managed a season at CK's FarmHouse at the appropriate $$$$$ CooksCountry season 10 that being said Im mildly concerned medically that a few of the Crew at ATK are now wider than they are tall well , Im hopeful they will understand this and deal w it on their own =tiem
  7. from complications of pancreatic cancer. 78. there is a well though out Obit in the NYTimes , w " an appraisal ' as a ' side bar ' the SB discusses " stars ' hope you can find a way to read it. maybe a google search can get you in ' joel robuchon dies '
  8. yes indeed a warm tomato , perfectly ripe, picked from your own garden is a true delight. I used to grow 24 tomato plants, in home made wire cages , soaker-hose watered , under a black plastic sheet 8 per row. that's what a ' snaked 'soaker hose would cover well. I started the seeds indoor in late jan. moved the seedlings to 1 liter plastic jugs that had been band-sawed top to bottom and re-sealed w clear packing tape. the tomats when planted had a packed 1 liter ' root-ball ' and were 3 ft tall they were plated on their sides w just the tip showing , as tomatoes root from their stem i could hear them grow ! those were the days ! the local squirrels thought the same thing. but there was enough to go around.
  9. @blue_dolphin raised an interesting question on the TJ's thread ; cooking the tart's from France : esp the one from Alsace on a 11" pizza screen. the 12 " might just fit , but not a 12.1 " does anyone have an item that is 12 ' round to see oaf it fits the CSO ? many thanks
  10. @Kim Shook you should call your version of BB : The Elvis.
  11. Time and Temp ? Fm Fz ? where do I get a 11 " screen ? I guess here : https://www.amazon.com/Winware-12-Inch-Seamless-Aluminum-Screen/dp/B001CICFAM?th=1 12 " is too big , for the CSO ? what's the diameter of the tarts ? is you have on available. it looks to me like the 12 " screen might just fit if its 12.1 " probably not

    Dinner 2018

interesting how much does that block of butter weigh ? is butter not being made in China ?
  13. Just back from Joe's : they havze the chocolate and the almond " pain's " they have the risen croissants , in grey bag they have the usual three tart's from France : d'Alsace , mushroom and tomato these are excellent and really do taste like France. however the dough is thin and they are difficult to cook perfectly. but worth it anyway ! Truscuits are gone for good ! they have been at Tj's it seems forever. why they do this , remove a real winner , beets me, and many otheres they did have the ham and cheese Fz squares , so I got a box to try. plenty of Mac&cheese w hatch chili , fz , a favorite of mine
  14. Im betting those cheese biscuits will spur the Locals on to finding a solution for your Next Trip !
  15. @Anna N I agree w you completely on this, with a Coda. some time ago , lets say the mid '80;s when i got my semi-free collection of 3.5 mm Copper pans from France and some Baccarat crystal if was semi-free as the FF was usually 4 / USD it was then 11.5 / USD and I enjoyed using these immensely for quite some time. had the TMX been available during those years and mechanically TopNotch i would have enjoyed that too. now its a bit differerent not better , nor worse just different
  16. @CanadianHomeChef I too am enjoying your journey w the B/PCF at its full price point , it has to be geared to fairly high end restaurants. no matter. enjoy !
  17. after a bit of Hydration Therapy : each packet says it serves two per packet : 300 Cal 13 gm fat , 6 gm sat. no trans fats NaCl 1040 mg fiber 10 gm total sugars 3 gms. interestingly they give the individual serving info alongside the full packet info. I see this as a nice ' dip ' , maybe w some add-ins , w the Naan-ish at room temp on days like this.
  18. they were demo'ing these this AM : I liked them both. the naan is really just naan-ish , and on the fluffy-doughey side , but i like it. Ill char a side over a gas burner when I use them, the ML were not hot-spicy at all , and might need a few drops of tabasco or if Id be using a whole packet at one time a tablespoon or so of one of Patak's jared pastes. I did not look over the ingredients . it to hot here to fiddle and faddle.
  19. well sometimes they are being helpful some something is soooooo goooood then again point taken
  20. P.P.S.: they have Hatfields near me when the Heat Breaks Im on it.
  21. " Pennsylvania Dutch country " is more or less a tourist trap. just saying nice quilts if you have an eye for Top Notch Stiching TNS P.S.: "" We were eating in a restaurant. " A Ha they did want to move you along and didn't cook it properly my guess. Scrapple takes longer to cook properly than one might think. I dont mind would not want it to travel further. So , maybe our Western Canadiene's Friends might review Poutine in Vancouver ? doubt the Top most Top but looking forward to current evaluations.
  22. @lindag since you are in Big Sky look fior Jomes Scrapple it will be Fz would you find it , PM me or maybe we might start a very short Scrapple Tread ? it seems like Im taking over this thread No No No Im trying to educate the LunchLadies nothing more.
  23. Sad , so very Sad @Anna N you have not had TNS. that being said , although the Jones refrigerated or Fz is quite good if one knows how to prepare it. but the very best I guessing can only be obtained in the Philadelphia Area there are several fresh versions and refrigerated etc i was fortunate to live in the area some time ago for three months. I knew about Scrapple as my father fried it on occasion for Sunday after church eats. he was a fan as am I.
  24. that's why I stipulated ' Top Notch ' Ive had TN Scrapple I hope you are not suggesting there is no TNP ?
  25. Someday I hope to try Top Notch Poutine. maybe w a side of Scrapple for perspetive. why do I mention these two ? neither seems to have traveled very far.
