    @gfweb cant say why anyone would prefer brisket to try-tip. make several tri=tips id you have them. fantastic sliced thin on a sandwich as any steak is .
  2. nothing to argue about . fond + maillard = constant equation works for all pans , as long as you don't burn the experiment
  3. @gfweb "whether a pan sauce is worth it ' its always worth it. always but please don't think that an expensive SS pan make your dish taster , w more fond you see in that pan. that fond was created from the meat , not out of thin air. Fond ( any decent thick pan , so nor burning ) + Maillard on the meat is a constant . no more , nor less.

Maillar-ing , Saucy-ness and etc from a higher-end non-stick pan : T-Fal this one : I have the notion that there are thicker T-Fal pans from GB and Canada. Id love to try one but being hungry these work very well for me. the Baked potatoes were not involved in these issues . Q.E.D.   5. Meat , Veg , SeaFood cant say i know any pan that knows the difference Il stay w my view : Pan-Fond + Maillard on the ( meat , veg seafood , from that pan ) is a constant , and best put together , w a sauce ( for the pan-fond ) on your plate.
  6. @paulraphael you have made interesting points. some seem outdated to me , based on my personal experience w T-Fal pans. I do get good browning on my Turkey Burger , and Beef burger. ive posed some pic. my pans were not damaged. "You get a mix of oil droplets and pan juices floating around together " I have not seen the oil droplets you have mentioned as I Use the T-Fal pans Ive found no pains anywhere where Ive used these pans for sauce for the final product on the plate . my point was very simple as I think Flame Wars are from way back when : Pan Fond + Maillard Rx is the same in sum , SS and good quality T-fal pans no more , and no less. I am pleased you enjoy your SS pans i used to , but now Im T-Fal for most things then again , I cook for One and not a Crowd. hope your restaurant will recover and do especially well !   8. equal and perhaps more so than anything else we might have but understand DARTO's do need conditioning before and while you use them not a big burden , but something you might enjoy adding to the pans if you dont , then DARTO is not someitng you would enjoy I like both the older and the newer versions.

  10. dont understand why it only accepts 10 " pouches should accept 10 " or less seems to not be well made or long lasting. some terrible reviews on Amazon.
  11. its my understanding that the ' soap ' taste is genetically determined. I cant say if that gene if prevalent in FR. I first heard of epazote in an early Diana Kennedy book back when real Mexican Food was quite exotic and quite different from Tex-Mex. I used it for a while trying to be Authentic , then gave up on it. in those early books , she said it grew wild in Central Park and she picked it there I may of crows be mistaken. it is a weed after all .
  12. @David Ross Ive used epazote from time to time. I didn't find its flavor interesting. its a bit medicinal it has reputation to help digest beans , muting some of the bean effects Ive taken that to mean it has some sort of inulin-ase activity. i didn't notice any difference w or w/o

  14. @gfweb I feel for you , but mostly Henry Beef is up , probably for simple reason : growing a cow probably did not change after all , I haven't herd of Cow distancing but , unless you process that Cow your self ... processing centers , using the cheapest labor they can fined and those workers need their work more than most of us do ... and now restricted , but not The Swells the own then so that's Cow Meat and Pig Meat for some time. Too Too bad about the Swells ... I take it there is now TJ's in your area they have all their stuff , and for me Senior Hour is quick risk out there in The Wild is time sensitive and the risk will only increase . TurkeyBurger ( TJ's ) pan saute maybe some CSO red potatoes form Tj's and Tj's hydration therapy with an e-book ( Bosch , Michael Connelly ) if I can focus later !

  16. I went down to the basement to do a little laundry found this , almost right in front of me : UnIOpened . 32oz. etc etc I know how @Shelby feels ! I rounded up all the white wash cloths i have , and several white towels, ' Gym Size ' washing them w bleach , not to disinfect , but why not ? after they dry , Ill have two small boxes on my Highlanders back seat : unused white towels + ( I chose white to ' show the dirt ' ) w the APC w Bleach Box # 1 Ill take out one unit , w my disposable gloves on , and spray it, use it on my hands , generously after taking off the gloves then toss that towel in box # 2. when B #2 gets full , wash all the contents , w bleach dry on Hot , and place in Box # 1 and start the cycle again ! Happy Days ! P.S.: I put this in Food as it relates to my trips to TJ's and RocheBro.

After all , nothing wrong w that. Breville seems to have striking designs over most of their lines. if you do go for Breville , Id consider https://www.breville.com/us/en/products/espresso/bes840.html a pressure gauge is very useful , but Id make sure you can set the pressure somewhere inside the machine , once. and the brew-head temp. and id comes in RED ! that will wake you up in the AM ! then there are Super-Automatics : https://www.home-barista.com/advice/super-automatic-espresso-machines-t14118.html https://www.home-barista.com/espresso-machines/super-automatic-vs-automatic-vs-semi-t1528.html I think they are expensive . so Id say , getting a new machine is a great deal of fun but its going to be the same amount of work for you compared for what you have a now. and any machine that you hope to get Barista Espresso out of should have a pressure and temp adjustment you do this only once. no Wine ( or Whine ) just yet . a home roasted Guatemala ,as a drip so far today. to go back to your original question : I dont think you are going to get equivalent ' cafe espresso ' for less ' hassle ' or as Id call it : personal involvement in the process. then there are these ( always check Amazon ) : https://www.amazon.com/super-automatic-espresso-machines/b?ie=UTF8&node=14162671 I had a ' shot ' from a Jura being demo'd a long time ago : 2000 or so ? it was an elegant looking machine , more expensive than the current crop , the shot had good crema ( robusta in the bean mix ? ) not very complex flavor ( bean mix and roasting ? ) and it did not, back then, have very much body , ie emulsion it was just ' strong ' coffee w crema , one button , done coming out of an impressive design. things may have changed . one last thing : I gifted a SupperEsspresso to neighbors who extensively helped me sell the home I grew up in , in the S.BayArea about 2003. SM no longer carries this sort of machine, and I bought it from them. They told me that machine was much better than the stuff at W-S etc. It was the only S-A they carried. It was about 1,000 back then. ( W-S was doing the demo on the Jura's ) the neighbors loved this machine . ease of use ( built in grinder , tamping etc ) push button , espresso in the cup. they were very kind to my father in his later days and very helpful to me w ideas on how to sell that house. for the joy they got out of that machine , it was a very very small price to pay. and they ordered roasted coffee from SM every few weeks for it. Im wondering if the Amazon SuperAutomatics have a fair return policy if you are not satisfied ? they might work far better these days than days gone by and you, of course , will be using far better beans these days than demo'd back then
