My husband had his dinner earlier so he could attend an event. On my own for dinner offered an opportunity to have something he would not care for! Thanks to @Shelby for the reminder to have an artichoke. I made it my dinner tonight. Trimmed and wrapped in cling wrap, then cooked on high for 5 minutes in the microwave. Rested for a couple minutes and served with melted butter. Ready to dig in! Getting there! Down to the good stuff!

Okay, artichokes have just been added to the grocery list! And I love my IP but I like to cook them in the microwave.

New Fridge/Freezer was delivered today. Yay! Interestingly, the old one decided to work again, but too late, so all of the freezer items were frozen when it came time to make the move to the new unit.

For the last eight years, we have done a road trip that involves renting a log cabin in a nicely remote area in northern Arkansas. The kitchen is equipped but most of the utensils and pots and pans are not to our liking, so we have the following in our camp box: Dry goods, utensils, paper products: Paper towels Puffs Baggies Knife Cutting board Cheese slicer Wine bottle opener and cork Fry pan Foil Wax paper Cling wrap Charcoal Chip clips Chill pack Coozies Wine and brandy glasses

A new twist on the challenge for me. Our 15 year old side by side refrigerator freezer has decided it no longer wants to keep food frozen in the freezer. We spent the morning shopping for a new unit and happily the new one will be delivered tomorrow. In the meantime, we have moved all freezer items to the lowest part of the freezer, which is still cool but above freezing, and topped them with 4 one gallon size bags of ice. The proteins are all at the very bottom and should be fine. Sure glad I have been cooking through my freezer!

The Fries were good, not super crispy but well cooked. Lightly salted and perfect for me, but my husband took one taste and went for the salt packets. We divided the Fries so as to have each as we liked. They have mayo in packets if that's what you prefer for dipping.

We went down to Galveston for ArtWalk today and had dinner outdoors at ZaZa Bar & Bites on Postoffice. They had live music and we enjoyed people watching while we enjoyed our meal and drinks. I had the Grilled Snapper Tacos and my husband had the Chicken Curry Masala with Garlic Naan.

Here is my updated inventory. Most of the protein items are staples and have been rotated or added since the beginning of the challenge, with the exception of the three pork dumplings, the one link of andouille, the smoked ham hock and the duck breasts. Will have to find recipes/uses for them, although the duck breasts were purchased with the idea to spread them out over a year's time. The first four items in the Misc. list are staples but have not been rotated since the beginning of the challenge, so I will work on that, too. This challenge has proved to be very helpful to me!

That looks wonderful! I still have four duck breasts in the freezer - one will definitely be getting a similar treatment!

My Potato Salad This batch contained four large thin skinned white potatoes (boiled until tender, cooled, peeled and cut into a large dice), four large hard cooked eggs (diced), two stalks celery and one-third of a medium onion (both small dice), about a half cup of mayo and a teaspoon or more of dijon mustard, salt and black pepper. The potatoes are kept aside until all of the other ingredients have been stirred together, then the potatoes are gently folded in. Cover and refrigerate for a couple of hours to allow the flavors meld. (I personally do not care for pickles in potato salad.)

My husband and I went to the source this morning. Froberg's Farm in Alvin participates in our local Saturday farmer's market but the farm and strawberry fields are just 30 minutes away in the other direction. So we went. Strawberries were our main focus but we came home with a whole lot more, including some jalapeño and cheese sausage and pork ribs from Greak's Smokehouse.

It's been four weeks, so it was time for another Pizza Night! This time I ordered an Italian Sausage and Mushroom Pie and added Black Olives and Parmesan after getting it home. Leftovers for me in the coming days!
