Used up some leftovers to make Fried Rice for dinner tonight. Leftover jasmine rice, bacon, chicken thigh and beef ribeye mixed with a couple of eggs, garlic, ginger, green onion, water chestnuts, soy sauce and white pepper.

Time to Bump This Up Again! It will be just the two of us this year, so keeping the menu simple: Grilled Hot Dogs, Potato Salad and Watermelon.

Thank you. My husband is the grill master. He starts the thighs over direct heat and then moves them to the top shelf and turns them at 10 minute intervals until done. Really crispy skin! These particular thighs were lightly seasoned with a cajun mix, but the color comes from the grilling.

I tried to grow cilantro down here, but it gets too hot too soon and the plants bolt on me. Luckily, I can get it year round at the grocery store for $.38 a bunch.

A couple of months back, the regular Diet Coke was MIA here. Research I did at the time said the sweetener that is used in the product comes from China and the supply chain had been disrupted.

FRESH PINEAPPLE SALSA Ingredients: 2 cups fresh pineapple, diced 1/2 cup red onion, diced 1 large jalapeño pepper, seeded and diced 1/2 cup fresh cilantro leaves, chopped fine 2 tablespoons fresh lime juice 1/2 teaspoon ground cumin salt, to taste Combine all ingredients and refrigerate until ready to use. Mexican Chorizo, Jalapeño and Cheese Scrambled Egg Muffins Pan fried Mexican chorizo (8 oz.) Fresh diced jalapeño. I lightly sautéed the jalapeños in the chorizo grease and then added them to the cooling meat. The batter! Six large eggs, 4 oz. shredded cheese, chorizo and jalapeños. Ready for 25 minute bake in 350F oven. Cooling! My breakfast on the patio.

What is it about salads that Charlie does not like? What might he like that goes into a salad? My husband and I have different likes when it comes to salads. For example: He loves croutons and cucumbers. I love olives, avocados and artichokes. Maybe a salad bar could work!
