Pan Fried Panko Coated Chicken Breast Cutlet with Cauliflower ‘Mac’ & Gouda Cheese Casserole and Green Beans

My Dad and his wife were living in the London area in the early 1970’s and my sisters and I visited one summer. One of my favorite meals was from a local shop - Fish and Chips (wrapped in newspaper), but I also remember Bangers and Wigwam. Are Bangers and Wigwam the same as Bangers and Mash?

The second half of last night’s Oven Baked Baby Back Ribs - reheated for 30 minutes in a 350F oven. Served with Panko Coated Vidalia Onion Rings.

Pork Baby Back Ribs - rubbed with salt, pepper and chili powder - then covered and held in the fridge for 4 hours. Covered and Oven Baked at 425F for an hour and a half with a bit of soy sauce and chicken broth in the pan. Then brushed with BBQ sauce. Wrapped tight in foil and returned to a 225F oven for another hour. We shared one half for dinner last night. The other half will be for dinner tonight.

This Pasta Salad will be making an appearance at Dinner tonight. Farfalle with blanched broccoli, red and orange bell peppers, green onions, marinated artichoke hearts, green peas, black olives, dressing (Garlic Expressions vinaigrette, parsley, dried basil and oregano), and shredded cheeses (Jack, cheddar, asadero and parmesan).

Personally, I don’t bother with taking the silverskin off of baby backs anymore. Have not decerned a difference in flavor. https://www.masterclass.com/articles/how-to-smoke-pork-ribs-with-barbecue-pitmaster-aaron-franklin-smoked-pork-bbq-ribs-recipe#how-to-trim-spare-ribs Silverskin. The silverskin is a thin white membrane located on the “inside” of a rack of ribs. Lots of people remove it, but Aaron personally likes to leave it on, as it doesn’t actually get in the way of the ribs taking on flavor. Whether you leave it on or not is totally up to you.

Yeah, I did an early morning run to my Neighborhood Walmart and for some reason there were no Libby’s canned Green Beans, but there were still some of the Del Monte and Great Value brand. The produce section was well stocked but when I looked closer, many of the offerings were old. And the same in the bread isle - some product out of stock and some had a best use by date of July 4. Not sure what’s going on there.

Happy 4th of July! I made the salads this morning. Potato Salad (with egg, celery, onion, dill, parsley, mayo, garlic vinaigrette, horseradish mustard and black pepper) Broccoli Salad (with red onion, bacon, shredded cheese, craisins, mayo, red wine vinegar, stevia and black pepper) Grilled Nathan’s Beef Franks (note the new grill grates and rocks - thanks to my hubby!) My plate! Watermelon to follow.

Pork Butt pressure cooked in the Instant Pot with Hatch Flame Roasted Chile Peppers, Salsa Verde and Orange Juice. Pork Butt - Carnitas broiled in the CSO and served as Tacos with Salsa Verde, Red Onion and Cilantro.

For the last month, our local liquor store has been offering free contactless curbside pickup. They have signs designating two spots as reserved for curbside pick up only. Yesterday, after receiving a text message saying my order was ready, I drove to the shop and both of the reserved spots were occupied, so I parked in an adjacent spot and texted back that I had arrived and was in the spot next to one of the reserved spots. Then I glanced at the two cars in the reserved spots only to find that they did not have a driver in them, only passengers. WTF! When my order was brought out, the clerk apologized for my having to park in a different spot and said “apparently some people can not read!” And most of the customers going in and out of the store were not wearing masks.
