    a lot of excitement Nero! what kind of balsamic vinegar? also are you able to get a good crust with marinating in EVOO? I used to do that but found I wasnt able to sear it as well as damping dry the steaks or searing them in a mixture of butter and oil and finishing in the oven

  22. Is there a question on whether this is true or not? (No more Foie Gras @ CT's) Of course, its true. Thats why I started this thread... There is no foie gras being served at Charlie Trotter's. This was a decision made by Charlie, himself. And just because it hasnt been in the media, doesnt mean the information is not accurate.
