  7. Its going to be impossible for me to send you any kind of bread. If I do overnight it to you tomorrow it would definately be stale by Sunday... I am sending you something that can be kept chilled until Sunday and is a true representation of fine Chicago Cuisine...Charlie Trotter's Citrus Cured Salmon...will be great with all of your breads... Hope you enjoy...

    Wine Tasting Notes 2003

I was at a Chateau St Jean tasting Dinner about 4 years ago at Smith and Wollensky. Steve Reeder, Chateau's Winemaker hosted the event. We sampled many of their wines and the highlight was the main course paired with Cinq Cepages 1995 and 1996. Although the 95 was excellent, it paled in comparison to the 96 which was a very full-bodied and rich wine. Both are excellent but the 96 is the better of the two, according to our tastings and Steve Reeder... here's their website BTW http://www.chateaustjean.com/jump.jsp?item...789&wineID=8503
  16. Thanks for all the different ideas! I have to admit I had never heard of or seen in Chicago Irish Stew as not being based in a beef broth but now Im even more intrigued by Irish Stew, thanks. And as far as my picture of Irish Stew I had posted, it was taken from the website of Curragh's Pub, located in the outskirts of Chicago. Here is what they say about their Irish stew: It doesn't get any more down home than this! - the Curragh's Irish Stew. Tender pieces of lamb slow cooked with carrots, potatoes, and herbs. Served with brown bread this dish simply sings out as an Irish speciality. Here is their website: http://www.curraghpub.com/about/welcome/fs_about.htm
  17. awesome post JAZ! How do you feel about repeating a certain ingredient throughout a menu... or not... Thanks... aw
  18. I think nine might be too far...what do you think...Opera is in the South Loop... nevermind..it should be fine...

  20. jaybee, dude, chill. the comment to jin was tongue in cheek and im sure she wasnt offended...I was surprised she hadnt heard of it, is all.. if she felt it was inappropriate she can answer her own self...
  21. jaybee, I posted a link to Irish Stew for those that had never heard of it before or needed more info on it or for those that thought Irish stew was simply "a stew". Yes, there are many recipes for it and thats exactly my point...its not just a stew - thre are many interpretations - and I simply wanted to know if anyone had a terrific personal recipe they really enjoyed that they wanted to share...if thats comopletely "obnoxious" I hope others beside you and Nina tell me im way out of line here...I really would like to know...
  22. What are you talking about? I simply asked if someone had a great recipe for this kind of stew? Of course, Nina was of no help, since she has never even heard of it before and tends to make snotty comments on my threads...and then your personal attack makes things interesting... I really dont understand your comment..please explain it to me...
  23. Thanks for the advice Jaybee, smartass.
  24. Thx Muon and Suz. I have tried many different Irish Stew Recipes... was just curious if any member had an even better one...
  25. And also to add to Nina's extremely insightful and helpful comments...isnt she always though? Irish stew can be very simple to very complex. Very Traditional to very Gourmet. Some use Barley, some use parsnips...maybe even rabbit... In case you thought Irish Stew was just stew as Chef Nina says, here's a link for more info... http://homecooking.about.com/library/archi...hive/blss31.htm However, again, if anyone has a great Irish Stew recipe I would love to hear about it. Thanks!
