  1. For cheese only, corn tortillas Ham & cheese on flour = sincronizadas...yum-my Masa on the beach, or any time they are made for me....
  2. A few months on from this thread... are there any new recommendations? We'll be in Princeton next week, 2 nights, and staying at the Nassau Inn, we would like to have at least one very good dinner, but not drive - although we will if you tell me there is something great... Thanks!

Sounds like space is a consideration, so I would say a range is very limiting - we have a very large kitchen (photo somewhere in eG) and we still have separates - AEG 5 burner gas hob sunk into the worktop, and on an adjacent wall - double Neff ovens - one is convection and regular, the other regular - this means that under the hob area I have double deep drawers to fit loads of pots and pans... In the Neff convection oven we manage to fit a 30 pound turkey - which is why we bought it - consider what you will be putting in your ovens - An AGA for example, barely fits a large chicken, I tried at a friend's house the other day... Personally I am against stainless steel in the home b/c of cleaning issues - no matter what the claims are, brushed, streak free, fingerprint free, you can always see every little mark and with a child on the way, this is something I would think about - especially b/c even cleaning it will leave streaks if you don't spend 1/2 hour getting it just right... We cook quite a lot at home and often very big, this combination was served well for over 8 years...
  5. I just bought this little jar of clear green-yellow liquid, flourescent almost I know I have had loads of things with ponzu sauce, but where to start? WHat to make? Ingredients: water, citrus juice (lemon, mandarin and valencia orange), stilled vinegar. citric acid and natural orange flavour. In parenthesis it says Mitsukan seasoned vinegar... thanks

  7. Totally agree with you! But if you're going to buy it already made, why not buy the real stuff? I wish someone would explain to me this fascination with boiled condensed milk, when it's just as easy to make the real stuff... the taste is totally different! Maybe it's just the will it, or will not explode factor...
  8. Ay, Pobrecita.... Maybe next time we'll rent a bus. OK c'mon, rent the bus this time! It can be one of those with open sides and a roof that has decorations hanging from the roof, bells, flowers, like Xochimilco on wheels! Of course there will be livestock on the bus, just to conform with the highway rules - and if they try an atraco, we'll throw a chicken on their faces!

    Roasting a Chicken

    Last night I did as follows: Whole chicken, rubbed with goose fat, salt, pepper and paprika, stuffed with celery sticks. Preheat calphalon pan in oven (as per above instructions, sort of) 200c convection Place the chicken in pan (sizzle, sizzle) 45 mins later - perfect juicy chicken, crispy skin... Messy oven, but who cares...

WOW, if you're going to this much trouble, why not just make the real thing: 3 liters milk 800 gr sugar 1 vanilla pod 1/2 tea baking soda Boil the milk, add the sugar, vanilla and bicarbonate - boil again on high heat and stir with wooden spoon continuosly until it thickens and becomes golden caramel colour - spoon out a small amount, if it's not runny, it's ready - dip the base of the pot in ice water. stir a bit more an leave to cool. This usually takes under and hour. The stuff in the can is good, but it's a totally different animal to dulce de leche, we call it telegoo (don't know why..)

    O M G!!! I have to try this, never even thought of it - forget the fact that Chessmen are not even available in the UK, I will bring back many packages when I go back... I make my cheesecake crusts here with Digestives, which are pretty good also on their own... But yes...Chessmen are my favourites

  13. sherribabee, NEVER stop asking questions, doesn't matter how irritated people get, especially in school - I just went through it and I can tell you that if you don't ask questions, you will have many, many blanks... as for the shoes, I wore Dr. Martens for a while and they were very comfortable and nonslip, which is important... we were allowed to wear clogs though...
  14. Correct on the Zizzi branches - the Paddington Street branch is allright and has the best bases so far, while the Wigmore Street Branch has much less crispy bases and sour sauce...

  16. not too adventurous - toast (any bread) and diet coke - failing that, any leftovers cold is good... I have had hot orange juice, not on purpose, after it's been in the sun all day - not horrible, not great, would not do it by choice, though... I have seen people put orange juice on cereal... never tried it, anyone do this?

Why would I go back to Bodeans? b/c there is no Brother Jimmy's here...is there? And we have been back, at least 4 times since July 7th! Every time just as good.

  20. I'll go with Rosa Mexicano also, but I prefer the Lincoln Center one... rgruby, I think you will find Rosa Mexicano superior to the Bayless restaurants.
  21. This actually serves a purpose, it's to keep the salt flowing in very humid conditions, such as the tropics... or London in the summer

Absolutely, for the kitchen dishes we have Ikea, a few years ago they had square plates and bowls, all white - and colorfuldessert, cereal bowls and other little stuff - the stuff is pretty strong, it's part of their 365 range, which goes in freezer, micro and oven (to 365f....go figure) Even if one style goes out, the new ones blend in, and you can buy one dish or 55.. For stainless, we have Christophle from Bloomies - great quality, does not need cleaning and always goes in the dishwasher

My mom cooked a lot, and quite well, when we were small, but only when the house was fully staffed - the cook did all her prep work and mise en place and the cleaner followed her around the kitchen. That was long ago in Mexico, these days she doesn't cook much, no staff, you see... she only cooks on the day the cleaning lady is coming! It's hard for me to cook in her spotless kitchen as it is small, but all the equipment is there, great knives included, provided by me one x-mas.
