  1. I fry everything inside...and I make a mess, but I try to keep it at a minimum. I use a splatter screen. That helps a bit
  2. They are all Mourning Doves that they get. I have two pairs of the collared and one pair of rock that hang around here at the house. They eat the mixed bird seed that I put out on the porch. I've never eaten any of that kind....my mind thinks they would be tough, but what do I know lol. I looked up your Inca doves. They are beautiful!
  3. I TAKE IT BACK I TAKE IT BACK!!! You're right! I couldn't find a picture with the pod things...but upon seeing the pictures they just sent I think you're spot on!!! Thank you!!! We have a guy that's keeping his cattle in our pasture right now. This little one is hanging out with the guys.
  4. It looks kind of similar, but I don't think that's it. I hope they remember to take a better picture today. I spent way too long googling yesterday and it's driving me crazy. I wanna know what it is. It's Saturday! I got up when the guys got up. What was I thinking lol. Yesterday was the last day that they were going to hunt. Today is for chores. For there not being a lot of doves around, they sure managed to get some. Appetizers the same as the day before .... Finally got the bread baked. Stewed okra (our friend loves okra), shishitos, fries and BLT's I'm off to the garden

  7. Eggplant parm is a pain to make for sure. Ronnie doesn't even really care for it so I only make it if I have one from the garden and someone is visiting that likes it lol...which is a combo that rarely happens. I've sent a text to ask for a more close up picture of the plant. The pods are part of the plant and the pods are totally green (I had found something with purplish pods that I thought looked similar but it's not). I don't think I could skin the peppers but that's a GREAT idea using ElainaA's recipe for the cherry tomatoes. I think it would work perfectly. Thank you!
  8. I just want to take a moment to say how much I'm going to miss David Ross. He always took the time to help and give very detailed answers on any questions I had. He always encouraged me on this topic and others. I loved all of the topics he created for the cook off series. David, EG won't be the same without you.

  12. It's funny you mention this. We have a houseguest right now that drinks Schweppes diet tonic water and vodka. I started a month ago trying to find it. Online it was ridiculously expensive. I ordered some--again a month ago--and it still isn't here. Anyway, I went to the big city grocery store and they didn't have any either. He had to settle for Canada Dry diet tonic water.
  13. Happy Friday!!! The guys worked super hard yesterday and were really tired and hot when they got home. They did manage to take a break and get some more doves--which they had to retrieve themselves lol. This time Ronnie plucked them--that's my favorite way because then I can stuff them with lemons and onions and roast them. Really good. Apparently they were channeling @CantCookStillTry's husband for this picture. Cheese, crackers, okra that I pickled, meats and Concord grapes for appetizers. Cheeses were all Murray's that I grabbed from the big grocery store. Left to right--a soft brie like herby cheese, English cheddar, Beehive Red Butte Hatch Chili, and a smoked gouda. I peeled a whole ton of tomatoes, chopped up onions, squash, garlic, mushrooms and picked a whole bunch of fresh oregano and basil and started my sauce early in the afternoon. The tomatoes are so juicy that they take forever to cook down but it finally got there. I also found some venison meatballs (thank you Lord) in the freezer . Phew. Because I couldn't find the spicy Italian sausage that I KNOW I bought. This beauty might be the only one that I get from the garden. There are more on, but they are still babies. I turned him into eggplant parmesan. Flour, egg wash, panko mixed with parm cheese Fried Covered with cheese and sauce and baked. I could've just had a huge plate of this and been happy. Plated up with pasta I also made a huge salad which I apparently forgot to take a picture of. They were too full for dessert. And I was too tired lol. Pickage this morning. Getting TONS of shishito peppers. I wish there was a way to preserve them for this winter. Today the guys are repairing the shooting house. A bad storm must have happened up there and left it very much worse for wear. My agenda is to make some white bread, can, figure out an appetizer....might just do more cheese.... I need to get busy lol.
  14. It's a soy sauce base. Years ago a customer from Alabama brought it to us and we've been hooked ever since.
  15. She's going to be smaller than Chum for sure. I'd say she weighs maybe 65 lbs? I've totally blown off canning today. I will pay for that tomorrow--however I did give a whole bunch of tomatoes to my UPS man so maybe that makes up for my sin.

  19. Good morning! The guys got up at 5 again. Which means I was awake too lol. They are doing a lot of tractor work and planting so they left Scout and Chum home with me. They are NOT happy about that. We all tried to go back to sleep, but it was a lost cause. So, I'm up, but I'm not moving around very fast. I canned, of course lol, yesterday. Right before I was getting ready to jar them up the guys walked in with a bag of jalapeños. Subtle hint for more spicy juice. So I added jalapeños at the last minute to make that happen. More rotel for the shelves. Breakfast burritos for this morning. Used up my next to last bag of Hatch chiles. Need to get some of those ordered. I don't know that I've ever posted about this before. Every year the government sends a big packet of envelopes and asks Ronnie to send the wings of all of the birds that he gets.--ducks, doves, geese etc. I wish I had kept the letter that comes with it. If I recall correctly he's like one of twenty five people across the country that they ask to do this. Of course, they might just say that to make you feel special so that you participate lol. So, he saves all the wings, puts them in the inner envelope and then into the bigger envelope and mails them in. So, doves for dinner! I am sure these have been on here before...I make a slit on each side of the breast and stuff with onions and jalapeños. Wrap each dove in bacon and marinate in Dale's and salt and pepper. The guys grilled out on the porch While I made okra Sliced tomatoes And scalloped potatoes The finished doves Oh and a fig gallette for dessert I'm thinking about skipping canning today and making a huge pot of spaghetti sauce instead but I need to see what meat I have...that will give me time to bake some bread for BLT's. I better hurry up and get out to the garden before it gets any hotter. It's certainly not feeling like fall around here!

  21. Phew. I didn't stop once all day yesterday. I could really crawl back into bed and sleep a while longer, but today promises to be another busy one. Our friend arrived at 10:30 yesterday morning. His first time flying during the pandemic. Baffling that they serve drinks and food on flights still....what's the point of masks when everyone takes them off to eat and drink?? After picking him up, they immediately went to the seed store and bought 400 lbs. of rye to plant out by the shooting house. The deer love to eat it. They loaded up the tractor and they will be planting it today after they dove hunt I think. Scout went with them...Chum is here with me. Back to yesterday. My bowl of cherry tomatoes was overflowing so I quickly sliced some up and put them on a tray and drizzled olive oil over the top with some sea salt. I do them in the CSO at 250 F for 3-4 hours. Then, I put them in a quart jar and keep them covered with more olive oil. They keep that way for a long time--well, we haven't died yet from eating them, anyway. I was planning on canning just regular tomatoes, but Ronnie told our friend about the spicy tomato juice that is a by-product of making Rotel tomatoes. I had just enough jalapeños to do a batch, so that happened. I doubt the juice will last longer than today. And, unless they stop and get some more, I'm out of peppers. In-between all the canning I threw a pork roast in the IP with a bunch of tomatoes, cumin, garlic and salt and pressure cooked that for an hour for enchiladas. I made a green enchilada sauce a few weeks ago out of some tomatillos and froze it so that made it easier. Also, I had made a green salsa and froze that, so I heated that up a bit for dipping chips in. I had about 6 avocados in the fridge but only 3 were decent enough to eat. CRAP. I wanted guacamole......but then I remembered a co-worker that used to work at a really popular sandwich place in the big city. She made huge batches of guac that people LOVED. Her trick was adding cream cheese. I know that sounds weird, but its really good and it stretches the avocados when you don't have enough. And of course, I made salsa. A huge amount of salsa. We have salsa for days lol. Pork enchiladas with RG beans In the middle of making dinner it hit me that they will be wanting breakfast. Arrrrgh....how could that have slipped my mind??? I forgot to take pictures but it was just a boring ham and egg sandwich of which I broke both eggs. Sigh. And then I went to bed and didn't wake up until 5:15 when Ronnie got up. I'm off to pick the garden...and to ponder dinner ideas.....

  23. OMG it's Tuesday already. Yesterday I got the whole house clean all by myself lol. Took a shower and then started canning about 2 pm. Got that done around 5:30 then started on a big pot of venison chili so that I'd have something for a couple of lunches this week--and that's also what we had for dinner last night. I was too tired to remember to take pictures, but you've seen my chili a million times anyway. I just got in from the garden. The cats are sleeping peacefully beside me as I type. Little do they know the disruption that is getting ready to occur. They got a lot of time off from strange humans being in the house.   25. LOL it is like a maze. Every year I think I've planted them far enough apart and every year it seems like Twister trying to get through them. We caged them and then pounded two stakes--one on each side. Some are very top-heavy though and we've had to add more stakes. Oh the cats HATE their space being taken up. I catch Newman using his little paw to shove tomatoes off the counter quite often. 🙄
