YES! I'm sorry. I always try to put @Jaymes' squash in my description. I make that at LEAST once a week. Need to get more Laughing Cow cheese--that's my favorite to use.
  3. Were the mangos amazing? It's been a while since I've had a good one. Lol, your wife is a great sport! It never crossed my mind but I guess redheads aren't super common there.

@C. sapidus I'm always looking for new ideas that are keto-ish friendly. Your tuna salad stuffed in the poblanos caught my eye! I've done that with regular bell peppers but I think the poblanos will add a bit of a kick. Need to pick some up at the store. Tried to hurry a pork belly and still get the skin crispy like I like it. Kinda failed lol. The meat was wonderful but the skin was chewy/crunchy --it was ok but not what I was going for. I'll do better with the other half. A bagged Thai chili mango salad and stir fry to go with. Wings and broccoli salad and squash Ronnie wanted to thaw out one of the briskets that he cold smoked for 4 hours at 150F and sous vide it. The first time I did one I did it for 24 hours at 155F. It was wonderful. The second time I did one the exact same way but I think it had to have been a different cut because it was dry dry dry. This time I did 36 hours at 135F. GOOD STUFF. Made sandwiches out of the leftover keto burger buns from the 4th of July and a salad. Oh and yes. A few fries lol. Big salad night with leftover fried chicken and brisket Jalapeno cheese sausages with peppers and onions, "potato" salad made with cauliflower --not too bad at all. The usual cut up tomatoes and cubes from the garden and also some collards from the garden. Last night roast beef roll ups, fries, shishito peppers and veggies.
  5. Yay!!!! I've been waiting for this . I'm starving. That chicken and rice looks sooooo good. And, love love love the sunflower garden. Looks like Kansas.
  6. Had a craving for @HungryChris' marinated mushrooms so got a jar of those going a couple days ago Annnnnnd it's that time of year again! Crock of pickles started day before yesterday.

Yes! I just bookmarked it and I need to write it down just in case it disappears off the internet.

Well, this won't seem huge but since trying not to eat many carbs, we haven't had bread in forever. I've tried several different keto bread recipes and haven't like them. We both reallllllly wanted venison burgers done on the grill--also have some of the first ripe tomatoes from the garden-- so I searched again for a new recipe for buns. Found one! Is it as good as my homemade bread. No. Is it the closest to bread that I've made. YES. It worked and Ronnie and I were so impressed. Cherry galette for dessert. I also have homemade strawberry ice cream but was too pooped to make it--that's for tonight

Been a while. Rained a ton last month and kinda stunted the garden. I think we got like 16" in a little over 2 weeks. Didn't stunt the weeds, though sigh lol. Still trying hard to eat keto-sh friendly. Nice to have our garden squash--the stuff from the grocery store just isn't the same. Pizza boats and salad Wings, broccoli salad and @Jaymessquash Big salad night Tuna melts and salad Some excellent choice steaks, asparagus salad and squash Larb with drunken noodles and edamame Ronnie got some lovely chicken gizzards from the Asian Market--so clean and nice. Fried and pressure cooked with ...wait for it...a salad Misfits had Cornish game hens. They are GOOD. Nice and juicy. R Rubbed a mix of butter, garlic, salt, pepper and Italian herbs under the skin. Roasted with cukes and tomatoes from the garden and the last of the asparagus. Also made a little gravy using Xanthan gum.

Happy Independence Day!!! I didn't want to start a new thread (again) and I know it's late--since today's the day. But, anyone making something special? I don't know what we're having yet. Fried chicken? Ronnie got some niiiiice choice filets.....BBQ beef?
  12. Good to know! I'll get a pot going!

I'll hang mine along with you. I could lay in bed for a week, get up, and still not have the ambition to do all of that.

WOW! I volunteer to be your sherpa next time even though I think that hike would kill me 🤣
  16. I'm disappointed in you 🤣
  17. The search here is tricky IMO.
  18. Just roll them, freeze them and then cook from frozen @FauxPas Here is a little tutorial I did with a link to a recipe I loosely follow
  19. I'm putting that fridge on my dream list. I LOVE the amount of space. Ronnie said I'd have it full of jars of "crap" that would sit in there until the end of time. He's prolly right 🤣
  20. OMG that's the biggest fridge in the universe! What brand is that? Could we maybe see the inside? I'd LOVE to have one like that. I'd have to build a bigger kitchen though.......

So glad you're home and back on your feet! I love red velvet cake.
  22. Usually around 40. Last summer a few never made any tomatoes. Beautiful plants but no fruit. Maybe that will happen again 🤣

Jalapeño cheese sausages and peppers with fries, sauerkraut and deviled eggs Fried chicken and collards from the garden I wanted Shakshuka but Ronnie doesn't care for it so I made a small one for me--I figured he'd end up eating some so I did three eggs. He made poached eggs for himself and then stole one of mine. He still claims not to like it lol sigh.
