The cilantro that comes up every year has been especially good for some reason but it's already starting to flower and bolt. I wish it would last longer. Yesterday I picked a huge bunch to freeze. First I blanched the bunch in boiling water for 10 seconds. Then I put it in the salad spinner to get it dry-ish. Next I spent forever picking the leaves off (I'm sure a bit of stem got in there too but that won't matter). Then I whizzed it up in the food processor with some olive oil. Froze it overnight in this bendy ice cube tray Vac packed just now and back in the freezer. I can throw a cube in whatever and then seal the bag back up. I thought that bunch would make a lot more but I was wrong! Oh well.

Well. I have to eat my words here. I even had Ronnie smell these ribs after they were thawed and he thought they smelled great (as did I). He smoked them for a few hours and then I SV'd them for 24 hours. AWFUL. SO freezer burnt. Disappointing. The texture was wonderful. But the taste UGH. I need to be more careful about eating things quicker.

Regarding the corn, yeah, mostly the carb thing. I do so love our garden corn but it all comes ready at once.....and yeah, I still have some frozen. If I could plant like 4 seeds and they'd germinate, I'd do that but I don't think that will work. Your tomatoes look good! I should be like you and plant flowers, I just never do. I want to plant more peonies.

Looks like all the onions are up. Radishes too. Planted 40 tomatoes yesterday plus 3 peppers. A few more peppers to plant. Maybe more tomatoes if we can't find someone to take the plants--have 24 of those left. Did a whole bunch of green beans this morning. Cucumbers and squash are planted too. Oh and also watermelons and cantaloupes. Asparagus going good--I planted 10 more crowns a month ago. Won't be able to eat on those for a couple of years. I'm still debating on planting corn......not doing okra because I have a ton frozen and a ton pickled still. First of the peonies My favorite flowers

My feelings are that I don't care how old it is as long as it still tastes good. I'll know by smelling these ribs when they're thawed if they are good or not.

Ronnie went to Sam's the other day and came home with a package of ahi tuna steaks. I marinated in soy sauce and then sprinkled Everything Bagel Seasoning on them and seared. Not too bad. Also found a bag of edamame in the freezer--new to us. I was shocked at how much Ronnie liked them. A little carby but sigh oh well at least it was something new and fun to eat. Turkey and bacon wraps Wings, bacon wrapped asparagus and sigh salad lol. SV'd pork chops, salad and brussels sprouts Easter was a splurge. Prime rib, scalloped potatoes, more asparagus and homemade chocolate pudding with berries for dessert

I found my ribs --I have you beat Sell by 9-10-2020--oopsie. I knew they were old but I didn't think they were that old lol. Wouldn't find them at that price now. They are thawing out in the fridge--hopefully they aren't freezer burnt.

Thanks for the inspiration. Those ribs look delicious! I think I have some beef ribs down in the basement freezer that I never look in lol. I need to get those out. I don't think either of you should change your ways. It's not a bad thing to have an array of choices for meals. It's not a bad thing to buy if you're worried you won't run across it again. I'm definitely the same way. I'm sure some of it is living out in the sticks and not wanting to not have something that I want to make for dinner that night. I'm also sure Covid upped my hoarding game too. Regardless, life is too short. Buy the fun stuff. Save it for a special day--or make an ordinary day more special

I've never tried corn tortillas in the shell bakers. Off the cuff I'd think they would need some fat? Maybe brushing with oil and heating a bit in a skillet or microwave before putting into the baker? I dunno?

My goodness, yes, I was shocked at how little it took thicken up 2 cups of liquid!

Yep, just plain tortillas in the mold. No fat. They crisp up beautifully. In my regular oven I do 375F for 15 mins. In the CSO I do 350F for 10 mins.

Took a couple pictures of Ronnie's hard work. These are out to harden off. I hope they don't blow away--I've never seen it so consistently windy around here. I mean it's Kansas. It's always windy but this is ridiculous. These are the little guys still inside

@Dejah You are a rock star to be feeling so horribly and still cooking all that delicious looking food! Tried some grain free lower carb taco shells--not bad tasting but the texture was .....difficult. When you took a bite it was crunchy for like half a second and then it turned mushy. Like cereal after you pour milk over--I like it crunchy, not mushy lol. I always check out the big portobello mushroom caps at Dillions. They are ridiculously expensive but then no one buys them so they put them on sale for like 2 dollars for a package of 3 huge caps. These I stuffed with a mixture of egg, spinach, seasoning and cheese. Salad and SV'd steak to go with. The last of the quail in the freezer. Ronnie wanted it fried again. Breakthrough on the gravy front. I used xanthan gum and made a cream gravy--carb free and it tasted excellent!!! Mashed cauliflower "potatoes" to go with.

Right???!! It gives him something to do in the cold months before fishing .....I think he worries that some won't come up. We can give some away to family members. And there are years that we don't get a ton of tomatoes no matter how many we plant. We so enjoy fresh tomatoes. I dunno. I'm scared lol.

Ronnie has tons going in the greenhouse. 60 tomatoes are up and I don't know how many peppers. Hopefully not as many jalapeños as last year. I still have a lot in the freezer. Yesterday I planted 300 onion sets--100 each of yellow, white and red. And 3 rows of radishes. I did very little today. I am sore lol.
