  2. I don't know what came over me, I don't even like cookbooks on Kindle lol. The picture on the front cover looked so dang good that I just pushed the buy button.

  5. I concur. We brine most all of our chicken. But ours is probably a lot saltier...we like a lot of salt ( I know, I know ).
  6. Ditto. I re-use lids if they have NOT been used for canning. Canning lids (not the rings) can only be used once.

  11. Just a heads up: McCraken should be running in the Derby and is owned by a woman here in Kansas. She named him after the town of McCraken here. @robirdstx I can't wait to hear if you make something special I remembered just a bit ago that my mom sent me a Derby Pie one year. Super sweet and super good.
  12. Anna, I saw this picture on the right side of the main page and thought that it must be in a cookbook. It should be the cover of a cookbook!
  13. Surprisingly, Baffert doesn't have a horse in this year. Well, unless like 7 horses scratch. One thing that is a must are deviled eggs. I must have deviled eggs on Derby day. It's a Shelby tradition.
  14. It's the most wonderful time of the year!!!!!!!!!!!!! I plan ahead because I don't want my studying/betting to be interrupted. This year is extra fun because Cinco de Mayo is on Kentucky Oaks day, so Friday will definitely be Mexican food of some sort. Saturday I'm thinking ribs, but that is subject to change. I tried to like mint juleps...truly I did, but I just don't. I'm just not a big hard liquor fan so I'll stick to my wine . The odds on the derby should be phenomenal --there just really aren't any clear stand-outs. I had a huge day when Calvin rode Mine That Bird and won at 50-1 a few years ago. I had $100 to win on him. I always bet on Calvin

    Woooo Hooooo!!!!!! 5 more days Thank you I followed this recipe --except I didn't use zucchini and I used SV'd chicken breast --as you know, very tender and good. And, I only put 5 biscuits on the pie, the rest I baked separately because they wouldn't fit in my pan. Oh, and I used a lot more spices. More salt, pepper, lemon pepper and thyme.   17. BUMP The date is rapidly approaching. Added bonus this year is that it falls on the Friday before the Kentucky Derby --always some good races to watch on that day, too. So, I'm trying to decide what to make. Anyone else gonna celebrate?

    Love the broccoli stem salad! Did you enjoy your new kitchen? Ronnie came in very early in the day yesterday to ask me if I wanted him to take anything out of the freezer for dinner. Translation=please don't throw hot dogs on a plate again tonight lol. So, since it was a very cold and rainy day I thought chicken pot pie sounded good. I sous vide a couple of chicken breasts and away I went. I had plans to make crust but after perusing the interwebs I decided on cream cheese buttermilk biscuits to top it with. I always make mashed potatoes to go with this and we also had some sprouts. I should make this more often. Twas a hit.
  19. Oh how exciting! Fingers crossed on your new house! Artichokes are the new thing I'm trying to grow this year--I always pick something each year. They are VERY slow to germinate and I didn't know that so we will see how they do. Congratulations on your new IP! I am assuming you are going for hard boiled on your goose eggs? I'd start with one egg ....doubling the time on my method would be 10 mins and that seems like too long.....so I would do one egg at 8 mins, low pressure, natural release and into cold water. Let us know how it goes, I'm curious. I have some duck eggs at the moment.
  20. Anyone watched Burnt yet? I can't comment completely because I've tried twice to watch it and have missed the first half both times. I found the parts about the Michelin Star people and how you can tell they are there interesting (if that stuff is all true).

    Dinner 2017 (Part 4)

    I did not feel like cooking last night and I wasn't very hungry...not a good combo for creativity lol. So, hotdogs with homemade buns and frozen waffle fries were on the menu. I usually boil our hotdogs in beer but we were out, so in honor of @HungryChris I decided to make dirty water dogs. I've never seen one in person, much less eaten one so I had no idea what I was doing. The recipe that I settled on was : 2 quarts of water, 2 T. red wine vinegar, 1/8 t. nutmeg and a pinch of cumin. Is that traditional? Anyway, I simmered the dogs in there for a good 30 mins or so. The hotdogs shrunk in size big time lol so there are 2 pictured on one bun.

    Congratulations @HungryChris ! I made Ann T's lemon pepper chicken wings last night. Leftover gravy (I know, weird) and mashed taters and onions and asparagus from the garden.
