Ok, thank you! Good to know. Thanks for the tip about peeling the melon. I've never done that before. I really don't care for sweet pickles but I do like the squash pickles--I've made 3 batches this summer so far. And, yeah, the only reason I would make the melon pickles is to try the bacon wrapped ones

Ok, so our garden finally produced some watermelon. I have not seen the inside of one but we gave one to the mother-in-law and she said it was wonderful. So, I've just been perusing the watermelon section. The pork shoulder steaks in red curry braised watermelon will be in the near future if I can find some red curry paste somewhere. @blue_dolphin I have been looking at the watermelon rind pickles....my great gramma used to make these and I didn't really care for them, but then again, I was a little kid so my tastes have surely changed. Were these worth the hassle to you to make? My watermelon is pretty big and if it's not worth it then I'm not sure I want to wrestle with it to peel it lol.

@Anna N Glad your pork was good--you just can't beat it SV'd...sooooo tender. And I love the container for the horseradish! Smoked ribs and turkey wings last night. Smoked in the cold smoker and finished in the Instant Pot with a quick trip under the broiler. Cheesy squash and rice casserole Okra!

Ok, ok, so I smushed it down...a lot..... I could only eat half which is not the way to go because the other half was pretty soggy this morning...but still good. @kayb Brilliant way to do meatloaf. Brilliant. @liuzhou I think your sauce looks great!

We buy them sometimes. I wouldn't rave about them, but they are ok. I never have been able to detect any cheese in the cheese ones, so I'd skip those. The smoked ones are decent. Good on a bun with a side of chips (fries ).

Ronnie and Chum went bullfrog hunting yesterday. And, they were successful! Although, I'm told that Chum is not the best frog hunter....they make her a little jumpy. Pun intended.

Thank you! It was a loin--not the smaller that usually comes 2 to a bag. This was big--I cut it into 4 sections and froze the other 3. It was in the water bath for about 3 hours at 135F. Then I seared the slices in my cast iron skillet.

This was in honor of the eclipse. I only bought them because they were aptly named Moon Cheese (got them off Amazon). I had no idea how they would be. Surprisingly, they are pretty dang good. The ingredients list only cheese. It's like crunchy dehydrated...maybe fried cheese? Not greasy. Not puffy like a cheese ball. Sharp Cheddar, Gouda and Pepper Jack.

I was going to do an eclipse themed dinner--mezzaluna pasta with half moons of zucchini, "moons" of pork...star shaped bread etc. etc. In the end, after canning all afternoon, I wasn't feeling super creative, so we had SV'd pork loin with mashed taters, gravy, our home canned green beans and tomatoes.
