WOW @Robenco15that looks amazing. @gfwebMy mom and I completely cracked up laughing about your casserole. I have Christmas prep to do.....buuuuut I'm putting it off for a few days. I've been a complete bump on a log this weekend. Venison spaghetti red to finally use up the last of the chili in the fridge @Ann_T's wonderful Spicy Honey Garlic chicken with a store bough frozen egg roll. I liked the roll....I like the ones I make with the crispy spring roll wrappers better. Ronnie refused to eat one lol. SV'd a beef steak with cheesy baked potatoes and more Asian salad Steak quesadillas Hotdogs and kraut Cold and wintry mix called for soup .....lump crab and canned clams Blueberry/blackberry galette for dessert Finally attempted another SV venison roast. This one was part of the hind quarters. Weighed almost 3 lbs. I SV'd it at 130 F for 4 hours. It wasn't quite done enough....a good sear remedied that. It was SO good. Next time--and I think I'll nail it without needing such a long sear--I'll do 137 F for 4 hours. Green bean/feta/balsamic vinegar salad and potatoes, carrots and gravy on the side Last night I finally used up the last of the leftovers from our hunters visit. Stuffed the mushrooms with the last of the cheeseball I made. Made paninis with the last of the roast beef

I am having the most --or top ten of the most--stressful holiday times ever. I want to just escape. No one would suspect if I come to your house...I'm fine just sleeping on the floor. but I need wine...lots and lots of it.

Don't panic! It will get done and what doesn't is OK. I've done away with so much Christmas stress....money for Ronnie's kids and grandkids. Ronnie and I don't give each other gifts...my mom and step dad and us don't and for the first time ever we're not exchanging with my sil and bil. So much easier. Maybe I'll get that magic feeling of Christmas back.... I still have no idea what Christmas plans are. Good thing I'm a fly by the seat of my pants kinda gal with some things lol. Ok. Maybe I am stressed a bit now....feels like there should be one more week in there. 🤣

My latest: I had a package of Peeps--Ghosts for Halloween. I made brownies and then spread them with marshmallow fluff. On top of that I placed a Peep ghost and then used the kitchen torch to melt/meld it to the fluff. I became so enamored with the burnt/melty ghost that I ate the rest of the package. Forget the brownies. One ghost after another. Burned/melted with the torch. Like a naked smore only the sugar on the Peep did something magical when burned lol. I now have Christmas Peeps coming from Amazon so watch out.- 416 replies

I haven't made cookies in at least two years now....reading this thread was sad with so many people gone now . I think Ronnie's kids will probably come over for the first time since Covid (Ronnie and I both got covid again right before Christmas last year) so I may bake.....we will see lol.

OH thank you. Excellent question. Nope. No heating of the milk. I tore up the bread--I even used the crusts (horrors lol) and dumped cold milk on it in the same bowl as the ground meat and spices etc.

My mom just called and told me I have to clarify my meatball post because the way the original recipe is she would never make it because too many steps 😁. I hate complicated recipes too. So. Our venison is already mixed with beef or pork fat. So that's what I used. If you use regular ground beef no need to mix it with anything--omit the grinding of the pork belly. The ingredients I used were the bread, milk, pepper, Lawry's salt, Italian seasoning and grated cheese from the GREEN CONTAINER . I omitted the garlic because Lawry's salt has that in there. Rolled the meat into balls and rolled into the store bought Italian bread crumbs that I had and then fried in 1/2" of veg. oil. I know my mom feels better now 🤣

This recipe makes the best meatballs I've ever had. I highly recommend making these. Mine are venison but of course you can used regular beef. Very tender on the inside. I've never fried meatballs before. I don't think I'll ever make them any other way again. While the sauce was thawed out for spaghetti I made venison/pepperoni pizza (in the regular oven...I was too tired to attempt the Breville) Last night was ribs, Asian salad, beans and mashed potato cakes

I have one I've been eyeing in my freezer, too. Mainly for the sandwiches. You could do a reuben pizza in the Breville--sauce with Thousand Island, top with onions, Swiss, corned beef and kraut.
