  1. After Santa's helper delivers my Christmas gift check there will be a Vollrath Intrigue 3 qt saucier in my kitchen. I also asked for a plain vanilla 6 qt stock pot. Sometime this weekend my DW tried to tell me they do not exist. While in Target Sunday I showed it to her. It is sitting in a Target bag under the tree. It is the right size for boiling up pasta without taking up too much space in the dishwasher.
  2. If you subscribe to their email newsletters you do receive "coupons" for 20% on-line discounts. Shel, once you have used you new Breville let us know what you think of it.
  3. Thank you,, everyone. I am going with the CI recipe.
  4. Since I have been unemployed for the last 7 months (still am) my DW and I opted for 7 lbs of eye of round roast for the Family Christmas Dinner we host. It is a far cry from the standing rib roast from last year. I am looking for suggestions for the best way to cook this. If you can make suggestions as to roast, braise, etc that will point me in the right direction to research recipes I would be most grateful. Thanks. p.s. I have had such poor luck using the search tool that if you can provide viable links I will gladly look at those also. Porthos
  5. Or go S-L-O-W-L-Y. I generally take about a minute with the peels from about 5 pounds of potatoes. As long as I take my time I don't have problems.
  6. My DW bought me a pair with the steam barrier feature. I like them a lot. I still have my silicone gloves also.
  7. Spent the evening of May 26, 1987 clearing the plumbing after trying to put artichoke leaves down the disposal. My 2nd daughter was born the next morning at 7:08.
  8. Not for this guy. I like the sweet milk left in the bowl after my Honey Nut Cheerios.
  9. The one or 2 sauce pans smaller than 2 qt that I have owned over the last 35 years were not useful to me and are gone. I would opt for an additional 2 qt.
  10. We keep butter in the original wrapper and box for 2 months easily, sometimes a bit longer. My best guess would be around 6 months with the extra steps you outlined.

    Mandolines

I'm guessing that there must be some technique to be mastered. We went over to my FIL's house last Saturday evening. She asked my to bring the mandoline along with which to slice up red potatoes (she roasted red potato slices with garlic-infused EVOO and fresh rosemary for this meal). I wasn't needed in the kitchen to begin with, and suddenly heard her ask I if I had my knife roll with me. I went into the kitchen and found she had abandoned the mandoline and was using a dull knife to try and slice the potatoes. I fetched in my roll and gave her a 10" forschner to finish the job. She was happy with that.

    Mandolines

My DW bought be a sturdy Cuisinart mandoline several years ago. I tried to use it a couple or three times and just couldn't get the hang of it. When I tried to use it on potatoes it just plain sucked. My DW now uses it to very thinly slice cucumbers for teas sandwiches and other than that it sits in its box. Just my data point.
  13. Does anyone here have any experience with the Vollrath Intrigue 2 qt. or 3 qt Saucier Pans? I will get a modest check as part of my Christmas and I've been thinking about getting one. I made my first white sauce 44 years ago in a simple S/S skillet using just a spoon. at this point in life I have a nice selection of everyday saucepans now and have used some of them for decades for my sauce-making. The main draw for me for having true saucier is the true large-radius side-to-bottom transition that allows for keeping the whisk moving and in better contact with the pan to keep the sauce as smooth and even as possible. It definitely takes more work to do that with my existing pans. Given that background would a Vollrath piece seem to be a reasonable addition to my kitchen?
  14. Among other pans I have Vollrath Pro-HG saute pans with the titanium-cobalt (?) coating that is good for high temperature cooking. The 8" and the 10" pans that I use all of the time are showing signs of wear in the coating. I doubt I will get the 25 year guarantee life out of either one. I see a life of 12-15 years. In general my DW and I have long since moved into the "buy inexpensive/replace when needed" mode for our non-stick saute pans.
  15. A Cook's Tour by Anthony Bourdain. So far a good read. I watched the series on Food Network back when. Host Note: eGullet Society friendly link to the book
  16. I went in for my annual fix. Was not happy with it. They were stingy with the BBQ sauce. That will do until next year. My standard Mickey Dee's fair will be back on my personal menu: The Grilled Chicken Southwest Salad.
  17. But it did make for a tasty Thanksgiving so far I can tell. I am enjoying reading your posts.
  18. Cuisinart 14 cup. Very useful tool. My 14 cup is out of service until I can locate a part I need. I purchased the Cuisinart 11 cup that is available at Costco. The power difference in the motors is significant. I would not recommend the 11 cup to others.
  19. My dear FIL could hardly boil water when my my wonderful MIL passed 11 years ago. He subscribed to the Cooks Illustrated magazine and started watching some food-oriented TV. 11 years later he handles himself in the kitchen very well and wins prizes for his contributions to a monthly potluck that is part of the wine society that he is a member of.
  20. A free glass of wine would not begin to entice me to try again.
  21. I believe that YouTube has a lot of videos regarding cooking. Mum and dad, or the daughter, could research videos to go with things she wants to try.
  22. I like all of the reference information in The New Basics Cookbook by Julee Rosso and Sheila Lukins.
  23. Another RWP Wilton platter, this one for serving dessert to our guild's head table at the Renaissance Pleasure Faire. $9.00.
  24. Our 5-qt Hobart KA (circa 1981) is sitting in a box for if ever we feel the need to use it as a spare. Our 6 qt sits on the counter. I asked the DW what she thought about a 7 qt. For what we do neither she nor I think there would be any advantage. But that red is gorgeous and it is a 7 qt ... We bought 5 qt KAs for both daughters. Older daughter never took it out of the box because everywhere she has lived (home, renting with friends, boyfriend) there is already a KA in the kitchen. She sold it a year or so ago. If need be we would give her our retired KA (purchased whilst my DW was PG with her). The younger daughter used hers for a few months after her wedding last year, then moved where there was no room for it. Now she and my SIL are living with us now and so there is no need of hers (red) to be unpacked again.
  25. While I have no direct experience with Opentable I am obsessive about always having my copy of any form of a reservation. That said I am indeed sorry that you were treated so shabbily.
