Jars would be at a possible risk of breaking if there was a pressure differential between the wall and the inside. Doesn't sound like that would be the case. FWIW, I don't think vacuum sealers draw that much pressure so it could break a jar.

To a marketer "farm style" sounds better than "thick".

I was in Japan a few yrs ago ...going to dinner at an old restaurant in a group. They filed through the door and I followed...until I got hit in my 6'2" forehead by the doorframe and got knocked down. When they were sure I was ok they thought it pretty funny...me too... I found a paper where people got CJD from a corneal transplant (which isn't CNS of course). The time to detecting CJD was 3 to 18 years. So not mad cow, but a similar disease where exposure date was known

The assumption is that prions are limited to CNS and not in peripheral nerves... In any event, fortunately no signs of CWD in venison eaters or hunters.
