  1. Chef is one of the many words whose meaning has been degraded. The overall trend saddens me. Somehow in 2020 notorious equals famous when it used to equal infamous.
  2. Stale bread chunks are a reward for Henry the airedale. Come when I call there's bread in it for you.
  3. I see it in resumes all the time. Its a black mark. But its part of the general misuse of words and trend to hyperbole that is rampant. Is any dish in a diner/drive-in/dive truly amazing?
  4. What does OED know about BBQ? Is there BBQ in the Oxford where they make the dictionary? I think not. And, being serious for a moment, common usage (as opposed to original derivation) usually determines a word's definition according to those who compile dictionaries. So all of the aforementioned definitions are correct in the places where they are used actively. And context matters too. If you offer someone in NC a BBQ sandwich, they'd expect pulled pork...in TX probably brisket.

  18. Instant pot for sure. Used once in a race with my pressure cooker. It lost. Stick blender gets rare use (but I use the miniprep a ton.)
  19. @ElsieD 2" thick...3.5 hours would be about right. The FIs I cook are about 3/4 " I think you you hit it right on the nose, so your warm-up cook could be at the original cooking temp.

  23. I find 2 hrs plenty. It isn't real tough to start with unless you treat it like a strip steak and grill it. You could test it. I'm afraid 24 hrs would turn it mushy. Agree w 24h for flank steak
