I have always had good luck holding hot food at 200 for a limited time, but I tend not to try it with foods that would be ruined (eg steak) by a bit more cooking no matter how small.

Toss the Air Bake sheets in the garbage. My mom had a couple and came to the same conclusion. They don't heat from the bottom at all, so by the time the bottom is remotely done, the rest is dry.

I get the same time frame when smoking flat cuts as well. I used to always smoke whole briskets but unless I am in the mood to spend a whole weekend smoking to make burnt ends out of the point end, I find it easier to smoke a flat cut. While they don't have the massive fat cap that a whole brisket does, my butcher knows I am smoking and leaves about 1/4 inch or so of fat on where he can. I also mop with a bourbon/apple cider/brown sugar mop which helps maintain the moisture.

I am waiting to hear back from WL about some wine I ordered after being solicited by one of their "look at this unbelievable price for this great wine" email flyers. I ordered 2 cases at their "you won't see this price again" price. We are now taking preorders on the Castello della Paneretta Terrine 2001. Rated 94 Points by the Wine Spectator, this fantastic Tuscan red is a blend of Sangiovese and Canaiolo. Our Pre-Sale price is just $37.99 a bottle ($455.88 a case). Please note, that when this wine arrives, any left over quantities will be sold in the store but the price will be $7 a bottle HIGHER!! Our in store price will be $44.99 a bottle . . . order today and save $84 a case on this 94 Pt Tuscan! I am also a frequent purchaser from the Wine Exchange (www.winex.com) and I just happened to receive an email last week from them for the same wine at $28.99. After figuring in tax vs shipping cost (I had to pick up the wine from WL) the difference is almost $7 a bottle, nearly 20%! What do you think my chances are of getting anything back from WL on this purchase? I bought 2 cases, not an insignificant purchase for me. Either way I will do my shopping a bit more judiciously in the future and refrain from drinking the WL Koolaid and I suggest that others do the same.

Mark's sauce looks killer, and I will try it but a Carolina mustard based sauce on brisket?? Might raise a few eyebrows among the family here.

I have seen hickory chunks (about 3-4" pieces) by the bag in either Lowes or Home Depot recently.

Always had good luck with Better Boy and Supersonic. We usually plant at least 1 Sweet 100 as well.

The bread is very good, but I have been getting very good bread from Carmen's on Chestnut St in Union for years and its alot closer to home. Try the Sicilian pie, the crust is more like a focaccia than the normal sicilian crust you find.

I received 8 of the O series as a Christmas gift and after my initial "return this" reaction I find that they, like everything else, have a time and place. I sometimes use them for G&T as well (the syrah/shiraz ones)

I am a big fan of the Weber Performer (have mine about 5 years now). I don't buy the convenience of the gas grill argument since I am ready to cook in around 15-20 minutes after initial ignition and I assume everyone pre heats their gas grills for approximately the same amount of time so where exactly is the time saving? Say when did they cheap out and put on the plastic work surface instead of the stainless steel one that mine has?

Santillo's has been my choice in the area for quite a few years. My 86 year old blind in one eye father still drives 20 minutes any time of night to pick up there. Brick oven, but not as crispy a crust as some brick ovens. Sauce a tiny bit on the sweet side. They also do a very good Sicilian pie with a crust that is not doughy like some I have had. I recommend it highly. I haven't been to the store in a while, but I can't believe they have changed from take out only as it is set in the back of a house in a residential neighborhood.

The brunch at the Molly Pitcher is an excellent if somewhat more formal (jackets required) affair. Although I haven't been in a while but I remember it being around $30-35 but I believe the reservations usually run around 3 weeks in advance or so. I haven't been to the Old Mill since it was redone, so I can't really comment.

Love my All Clad. Luckily we don't live too far from the Cookware&More AllClad outlet so I have never paid retail for any of it, but if I had to, I definitely would.

Great blog Monica. I have been enjoying Indian food for years and years but was always tentative to try making it myself. This could finally be my inspiration to start, perhaps with that delicious coconut shrimp curry..... thanks and keep up the great blog. -
What is a pork roll? Scrapple? ← Pork roll could perhaps be the single greatest processed pork product ever known to man. Kind of like Spam in the shape of a big piece of baloney, but much better. Best served on a hard roll with fried egg and cheese. Actually a New Jersey product but also found in Philadelphia Scrapple is everything that wasn't quite up to par to be put into hotdogs mixed up with some cornmeal, then pressed into a brick form. Best served fried with maple syrup. Scrapple is a product indigenous to Pennsylvania. I can't believe there are millions of people around this world who have never experienced the nirvana that is pork roll.

I know I have seen pork roll and scrapple available online, perhaps at phillypretzels.com. Musicwise, you need to get hold of Tommy Conwells young rumblers (my bro played with him in college at UofD) and definitely the Hooters.
