At the insistance of Brazilian friends we just made a batch of prune ice cream. They say its very common and popular in Brazil. Very interesting and tasty.

Two quart ice cream machine. Just discovered what real ice cream can be like.

Chop the meat with a knife not ground. All the difference.

Try using scissors for slashing wet dough. I think you will like the results.

New Samsung stove has warming draw. Just have to remember to stack dishes in there and turning it on.

Just made a first batch of Lemon Gelato at the Philip Mahl Memorial Kitchen from a recipe posted by bellalimento.com 6 lemons zested and juiced 6 egg yolks 1 1/4 cup heavy cream 2 1/2 cups half and half 1/2 tsp. vanilla extract 1 1/4 cups sugar Just following the instructions did not separate the solids and froze with all of zest. Results fabulous, lemony,bitter sweet and a sip of grapa. It will be very hard to buy the commercial stuff again.

Just grilled up these locally grown, grass fed steaks from Rancho Ojo de Agua. Used a method tought to me by my late son Philip where a cast iron griddle is placed in a gas grill with a stone under one end. Grilled the steak 8 min. on a side then directly on the grill for a little char. Tested for doneness with instant read therm. to 120 degrees.

Last night at the Philip Mahl Memorial Kitchen we prepared a dinner for 8 for the winners of the drawing that was held when the we opened the kitchen. For a main course - Cornish hen with citric, honey, wine sauce served with roasted root vegatables. And for dessert individual Chocolate Chaud et Froid with fruit coulis.

Everying I use is listed here. Nothing to add. I will say that I discovered chipotle in adodo on my first adventure in Mexico in 1970 and it's nice to know that the rest of the world has caught up.

Yes, I know it well. I first tried Mandarine Napoleon in Mexico some 30 years ago and have always liked it. Nothing has else has that color in the glass. By luck I recently found some at Spec's in San Antonio and I will be buying more. This is great stuff. Made in Belgium by Fourcroy S.A.

Tried something new today to form a loaf. Let the loaf rise in the ring of a 7" springform pan. I put a paper collar around the inside of the ring and then removed the ring and paper after 20 minutes in the oven. This loaf is half a regular batch and weighs one lb. 12oz. What do you think of the results. -

We live in a hard water area and noticed a negative change in dishwasher performance in the last few months. We now use wal-mart brand powder, half the quantity and a 1/3 cup of white vinager when loading the machine. Getting very good results.

For me it is still a horror that haunts my dreams. It is said that odors are the strongest memories. I can't forget. I want to forget, but it won't let me. It made me question the whole belief that my family was made up of rational people.

Don't throw away that watermelon rind - pickle it. Great to crack open a jar in the middle of the Winter and remember those hot Summer days.

Tonight it was too hot to eat outside even in the shade in South Texas. We had shrimp with saffron rice pilaff with a bottle of well chilled French wine. Check out Philip Mahl Memorial Kitchen on Facebook. Real progress is being made in construction.

Heat the tostados on a grill then spread with mashed beans, white cheese and avocado. Some salsa fresca will not hurt.

Found Armenian preserved walnuts 15 oz. at $3.99 at the middle eastern grocery store in San Antonio "Ali Baba" Always find new wonders there.
