Great article about the "Frog" in the January edition of bon appetit. Also a write up in this week's New York Magazine. Perhaps the Frog is back. I for one never thought it went away.

A friend bought a goose on sale and cooked it on a Weber. We got to enjoy the results. Give it a try. If you like duck you will like goose.

First try making chorizo at the Philip Mahl Memorial Kitchen. Used a recipe for Spanish Chorizo from the New York Times Cook Book, Craig Claiborne 1990. Not Spanish Chorizo that I know but very good for fresh sausage for a first try. Had for dinner with short grain brown rice and a bottle of wine. Had the leftovers for breakfast. I expect we will be doing this again.

Just put a piece of plastic wrap over the jar before screwing on the lid. Problem solved.

While traveling through Panama City I picked up a bottle of Flor de Cana Centenario 12 year rum from Nicaragua. Paid $24 U.S. Now a word to the wise, after you clear customs put your purchase from the duty free into your baggage before re-checking. I did not and in going through U.S. security they would not let the bottle through so I had to but it on the plane as a separate package and it cost $10 more. This will not happen to me again. So, I opened the bottle the other night - very nice, smooth, similar to a very dry brandy. Soon, on cold winter nights in front of the fire Flor de Cana will come in very handy.

Tried the Brioch recipe from the book. Here are the results. Baked in a ring mold from the dough from half a batch. This is the crumb. Really good. -
Stuffed peppers right out of the late summer garden with a good bottle of wine and tempuratures cool enough to eat outside. A very nice Sunday late lunch.

Look up "Lemon Mousse for a Crowd" Published: May 24, 2006 – New York Times Served in Martini Glasses with some pomegranate seeds sprinkled in top. You will get a loud round of applause.

Today, quail with a wine berry sauce yellow rice with toasted cumin seeds. I have not posted for quite a while - been to busy at the Philip Mahl Memorial Kitchen. Check it out on Facebook if you get a chance.

We use old T-shirts that have reached the end of their useful life - washed, cheap and clean.

That Mandarin Napoleon is mighty fine in any number of refreshing tiki drinks or sours. Just sayin' Thanks for the tip. This is another reason that I keep coming back to E-Gullet.

Recently picked up a bottle of Armagnac de Montal VS, some amaros and a bottle of Mandarine Napoleon. Don't expect that I will crack them till the Fall when things cool off. It's going to be over 100 today again.

Lately I really began to like cutting up chickens. Funny but I seem to getting better and better at it the more I cut up.

Stainless steel shears from the hardware department. Cheap and sharp for cutting up chicken.
