  1. So @Alleguede and I are heading to Atlantic City for the Philly Candy show in a couple of weeks and I anticipate we will need to find a few meals. I found a few old threads but I'm hoping to get some up to date suggestions. A variety would be good - probably not a lot of fine dining unless there is someplace that we simply should not miss. Thoughts?
  2. Exciting mention today for EZtemper! Michael Laiskonis, eG'er from way back, previous executive pastry chef of 3 star Le Bernardin, and now Creative Director at ICE - where he is currently creating a bean to bar chocolate lab - has added an EZtemper to the lab. Facebook link here
  3. Steam baked at 300 for about 10 minutes for the blind baked crust, then another 10 minutes with the frangiapane and fruit.
  4. Experimenting with a little tart pan I found that fits perfectly in the CSO. Used the hot water pastry from David Lebovitz's blog, made some almond paste, then a frangiapane . Had no fresh fruit in the house so dug out a few freeze dried peach slices - I should have rehydrated them I think
  5. I don't feel the need of bluetooth myself - I'm generally in the room with it when I get it going and it's got the keep warm when I'm done if I've left the area. I think the popular version is the Instant Pot IP-DUO60 7-in-1 Programmable Pressure Cooker, 6qt/1000W, Latest 3rd Generation Technology, Stainless Steel Cooking Pot and Exterior - at least that's the last 2 I've purchased.
  6. We are going to be taking this beast up north in October, aren't we? Does it do anything low carb?
  7. Yup - sautéed the onions first, added green beans and sautéed a bit more. Left the onions in and added the tomatoes. The green beans were soft but with a bit of tooth left which made them quite satisfactory IMHO.
  8. Made the trek up to Brighton in Northumberland County yesterday to demo my EZtemper to a chocolatier there. After business was concluded she invited me to dinner at Dougalls on the Bay. Lovely weather, lovely view! It's a pleasure to eat outside at a restaurant where it is quiet. Somehow tables outside on a busy street just aren't the same!
  9. Stopped in at the Farmer's Market in Dunnville, Ontario this morning for a few items to cook in my Instant Pot at work. Should have thought to take a picture of the market itself. Grabbed a basket of peaches for the nurses. They are eating them but not as fast as the chocolate I brought. To make some sautéed green beans. 6 lovely cobs that I will take home (or have for dinner)!
  10. First shift back at Dunnville after my summer Manitoulin adventure. Left the house a little early so I could hit the farmers market and pick up a few things to cook. Decided I wanted green beans similar to what SobaAddict had posted recently. Sauteed onions then green beans, added tomatoes and tiny bit of liquid. 3 minutes under pressure - quick realize with a towel to prevent steaming the whole room. Now to snarf it down before they drag me back out to see patients.
  11. Yup - sugar with a tiny bit of water or lemon juice. Cook until caramelized and pour quickly into dish.
  12. Flan - 250 ml milk, 50 heavy cream, couple of tsp sugar, vanilla and 3 eggs - strained over a caramel - steam 190 F 40 minutes.
  13. 2 kg chicken - 30 minutes steam bake 450 F with foil protection, turned 180 - 30 min steam bake uncovered.
  14. Chicken was relatively inexpensive at the supermarket the other day. So first chicken in my new home CSO. This morning I made flan - will try to remember to take a picture when I turn it out after dinner.

  16. Sounds like what we call Indian Candy - I make the mine based on the recipe that Minnie, who lived with my granny in Cowichan Bay, gave to me. Pretty sure I've posted it here before but feel free to PM me for the formula if you want to try 'smoking your own'.
  17. Made the Seeded Quick Bread from the Recipes that Rock 2016 - but instead of a shaped loaf, did it in a pan. Will cut into it in the am and see how it tastes.

  21. Ok - so this becomes dangerous - I'm about halfway through the Larb thread and I come across Chad's first larb attempt. So now the rabbit hole leads to Chad's An Edge in the Kitchen. Ok - back to larb.
  22. And worse - you have to leave town to buy tomatoes!
  23. Don't think that fungus would melt - so likely sugar. Glucose might help. It's very pretty though!
