    Shallots

    We get either the piddling little shallots or the really huge great big ones - I love the big ones - much less work!

  7. Yesterday's darker ones had a better crust - these are nicely pudding like in the center. I'm debating @Alleguede's suggestion of butter and fine sugar in the mold

Yorkshire Pudding Ingredients ⅞ cup flour, 120 grams ½ tsp salt ½ cup milk, 125 grams 2 extra large eggs (the eggs I used today were honking big double yolkers) ½ cup water, 125 grams Method Beat together all but water. Add water. I then let this sit for a minimum of one hour on the counter. Pour some beef fat (a tablespoon or so each ) into about 18 muffin tins (or 12 muffins and one loaf pan). Place them in the oven while you preheat it to 425 F. When oven is preheated and fat is good and hot - stir the batter and divide between the tins. Watch for splattering oil. Bake 20 to 25 minutes until puffy and browned.

  12. That would be cou-cou in Barbados - usually yellow corn - cooked with okra and served with 'butter sauce' which is tomato, onion and peppers
  13. These are not the good ones - these are the ones I wanted out of the mold right away! Not concerned about them sticking together as they are going to be melted down and applied to pretzels. Sorry for causing angst!
  14. Eat your heart out! But it doesn't taste like alcohol either - so perhaps all the sweetness is hiding it.
  15. Yesterdays perfect caramel - today's dipped on a cookie caramel, bark and bars. Actually this caramel is day before - has standup but needed to be in freezer to get out of the mold.
  16. I've rarely seen a grocery store that doesn't have Maria biscuits. The ones I found here are no name - 800 gram box. If you had to substitute I'd get the Dare Simple Pleasures Social Tea. They are actually my favourite cookie for icebox cakes and for a dessert I used to make when we were sailing that had cubes of jello, broken up social teas and whipped cream.

  18. Yup - 6 limes and it resulted in greater than 1 cup of juice with the limes I had. and decorated with lightly sweetened whipped cream with a touch of vanilla.
