Air conditioned air has lower humidity. The Hilliard is not adjustable for humidity as far as I can see. For sure I think a low humidity room isn't going to give the fridge as much of a challenge.

I don't know - I'm now above the temperature of the first batch that was too firm. Only thing different was the pot so it must be carry over heat. Next batch a degree or two higher. I purchased the book Lamingtons and Lemon Tarts before I came up. This is the first thing I've tried from it - Jamaican Ginger Cake. Can't imagine how tall it would have been in the 7 inch springform called for.

We have an alarm on the upright in the basement - goes off every time we open the door. Disabled after the first few times!

Another mixture that might work is what we used for a big fluffy lime pie when I was a kid. It had a graham crust on the bottom and nilla wafers around the sides. You chilled the can of evaporated milk in the bowl, along with the beaters - 1 can evaporated skimmed milk 1 pkg lime gelatin powder ½ cup boiling water ¼ cup sugar ¼ cup lemon juice and grated zest green food coloring Make the jello with the boiling water, sugar and add the lemon juice. Chill. When it is starting to thicken fold into the beaten evaporated milk.

Can of milk and 1/2 cup lime juice sounds familiar. Add the lime zest too.

This is making me think - Jim - do you have wire racks in your fridge or solid glass shelves?

It's certainly a mixture I've made before for the filling of a lime pie - don't see why it wouldn't work as the 'whipped cream' part of the icebox cake.

The Hilliard cabinets are essentially a box with doors, racks and an air conditioner in it. It's got lots of air circulation. I'm betting that the school where Peter teaches probably has Irinox holding cabinets. The French Pastry School has them as do a lot of european confectioners. They are completely adjustable for temperature and humidity. I've got friends who have set up an air container in a window and just place their product on a speed rack in front of the unit. Other folks have made a box that looks like a dumb waiter - the door opens the same way - and again it's got air conditioned air blowing down into it.

I grew up on a sailboat. I fished frequently. Remember catching my sister really well one time when she was standing behind me. Think that counts as her being in the proximity of an idiot!

Two places to work tomorrow - so have to have two baked things to take. Got lazy - made a double batch of my mom's recipe for rhubarb date cake/muffins and made some of each.

Never had a gift of fish. Males definitely outnumber females. Strangely alcohol doesn't usually seem to be involved with fish hook injuries but it sure is with head lacerations.

Oh my god - forgot to post the cocktail. Widow's Kiss. After the picture was taken I put it into glasses that we weren't likely to spill while eating a feeding a child. And that had a decent amount of ice in them! (and Anna still managed to knock it over)
