  1. Joe Beef apparently makes it - so perhaps from there. Wonder if it's in their cookbook?
  2. We made a cheesecake piece that was very nice at the workshop this year. It started with a baked cheesecake then the addition of cream and chocolate I believe. Don't have those recipes with me - won't have access for a day or so. Perhaps someone else from the workshop can PM it to you.
  3. No direct experience with the waxed foil - wonder if you could buy a small enough package or get a sample from this company.
  4. True that - it was good however!
  5. And finally a leisurely hike down the Champ de Eylsses. We saw these 'drive your dream car for 90 Euro' cars on one corner. On the next corner were the valets with a bunch of similar cars. Wonder if the two are connected? Now time to get back to our digs and get packing. Totals for the day 22,727 steps for 15.5 km and 30 flights!
  6. The Opera House on our way to ramen Quite a lineup - at first we thought it was smaller than the other shops - then realized most of it was inside. Gyoza Rice with chashu for @Alleguede Medium fat shoyu ramen for me.
  7. More walking after returning to the city - Ended up at the back door of the tennis match going on in the city right now.

  9. My thought too - I'd love to do a side by side and see how they measure up
  10. This afternoon we went out of town to visit the manufacturer of this depositor - same one from Eclair du Genie. Beautiful machine - nice to look around their shop where they also use their 7 CNC machines to make medical and aerospace equipment. The pump in this one makes dealing with soft, runny doughs a real treat.
  11. You can have your picture taken with Vincent Van Lego
  12. He did say he would have been willing to take even 10 Euro to help!

    Bark Prep

I don't actually go for a neat appearance myself - I break my bark into shards and package in cello. I know some people make what they call bark in a thin rectangular mold (often silicone) - placing the thin layer of chocolate in the mold, then sprinting the inclusions on top - then they can break it into rectangular bar shaped pieces.
  14. Indeed - I've heard it a few times myself. I was born - but not yesterday!
  15. Montmartre by night. As we came out of the church and I commented that the poor girl still needed her crutches - @Alleguede reminded me it's not Lourdes! That big tower by night as seen from the Louvre. We had a rather talented gentleman spin us a tail of his wife having her iPad and purse stolen at the Louvre - he only needed 45 Euro to get he and his wife and his 4 kid back to Euro Disney. No sign of alleged wife and kids. And what a coincidence - he was Canadian too! Atelier Joël Robuchon Saint-Germain attached to a posh hotel. We logged 26,160 steps for a total of 17.5 km with 21 flights of steps (but it felt like more!)
  16. Tomorrow grasshopper! We had to hike up a million stairs to a church!
  17. This is an Amaretto Sour Panzarotti Risotto
  18. Restaurant Capri - at the tail end of Boul St Honore - this is not an Amaretto Sour I discovered - just Amaretto on ice.
  19. So after lunch we needed to do some ice cream R&D And some more walking Loved the kids in the park sailing their little boats. Saw this store and had to drop in
  20. And the walking continues - Many fancy and not so fancy lingerie shops! The lighting didn't lend itself to good pictures - but we found the busiest shawarma shop on a Greek street and grabbed a bite. Quality determined by the number of pigeons inside the restaurant. They seem very discriminating. I notice when the little boy at the next table left - so did the pigeons.
  21. If you wander around the block from the main Eclair du Genie you find their production facility and you can spend a little time trying to see the temperatures on the ovens and determine the settings on their depositor.
  22. Quick trip into Clement Design to check out chef coats. Back into J. Detou to pick up all sorts of goodies - I got my spice I had seen last trip and another pepper that smelled quite awesome. Coming around the corner towards Mora and Deco France we found a street market had been set up. With a small enough car you can park just about anywhere.
  23. Off and running first thing this morning - we wanted to check out Du Pain et Idées - a pastry shop that specializes in escargot that I recalled from my last trip. @Alleguede was not impressed with their croissant - but allowed that the pistachio escargot was quite alright!
  24. We might be finished with our Chinese search for now (might have to leave that to next trip) - but James I'm curious about where your favourite Ramen joint is?
