  1. So, while you can't just find a temperature to leave an egg in indefinitely for poached egg - you can poach eggs with the tasty. This was 185 F - several minutes - a minute less would have been perfect.

    @patris made us a lovely breakfast of menemen with shisito peppers. i was fooling with the Tasty Onetop that was delivered here just before Christmas and tried a poached egg - so egg on eggs - what's not to love. A little overdone. A couple of 'test' danish for breakfast dessert.
  3. I think that a lot of things can serve as a nucleus for crystallization but sugar is going to be the most likely.
  4. Would start on edges and work it's way through over days to weeks.
  5. Why not sprinkle them with a mixture of cocoa and powdered sugar before rolling. I suspect if your caramel has enough glucose they won't crystallize.

  10. My recipe uses baking powder - and puff was involved as I recall. Been a while since I made them. It was a combination of fava and chickpeas.

Paypal.me link So who wants to go first and we'll see if this works? To ensure your space in the workshop I will need your payment no later than April 6, 2018. Beyond that date - if you haven't paid - you will be considered to be on the wait list and and will have to see if someone drops out and wants to sell you their space. As in previous years - there are no refunds - you can sell your space to someone who is interested in coming but missed the deadline. In that case payment will have to be arranged between yourselves.

  18. It's kind of a cheesecake I'd say. A bit wetter and less lofty than I had hoped. Eggs, sugar, ricotta and booze - I guess lofty might be dreaming
  19. Piping for solid items is my favored method for flexy molds.
  20. Yesterday began phase 2 of easter production - plaques and suckers. As usual the eyes have it. This bowl holds 3.5 kg of chocolate with no problem. The problem only comes in when I try to get it in to my above shoulder height microwave to melt. EZtemper makes my life easy again. All packaged up and ready to go to work on Saturday.
  21. Was over doing easter eggs with the ladies from St Luke's Church, which they sell to raise funds for El Hogar in Honduras. I've been helping them more than 5 years now - eggs this time of year and I talked them into bark at Christmas a couple of years ago - and I must say they are getting neater! She is wearing much less chocolate than last year. The floor on the other hand....
  22. Anna and I found a Corsican cookbook in Homesense yesterday - I took a pic of this recipe when couldn't read it when I got home. So had to go back and buy the book. No lemon eau de vie in the house - so used my homemade buddha's hand booze. Turned on the broiler to get the top a little darker - then got distracted - so a little browner than expected. But not actually burnt. Think maybe a little smaller pan next time around.
