I have a couple of the bigger confectionary funnels - one with a stick, the other like the Matfer above. I don't find them useful day to day - pate de fruit hardens too quickly to deposit with them, most ganache doesn't flow, and most caramel I make doesn't really lend itself to the funnel.

Love these! Especially nice with Buratta and a bit of balsamic.

Actually, pre EZtemper I used to temper this by putting in a bowl over another bowl of cold water and stirring until starts to thicken.

So the bottom piece of stainless with the wooden 'spike' in it was the stand and the other 3 pieces of stainless with the felt on the bottom of each fit down over top of the spike. Kind of like a coaster holder but with a hole in the middle. This is a Value Village square in the middle of a largely Indian community. A lot of the stainless we saw in there were Indian food based pieces.

Eutectic effect of one fat on another fat means that the resulting melting point is different than the melting points of the initial fats. I suspect you could probably get this to solidify by tempering it.

Looking through all the Artidinox products - there is nothing like this currently for sale - but they seem to make bowls for serving curries etc and I wonder if this might be the plate for under the bowl.

At the PMCA this year there were several vendors selling 'peanut oil flavor' and by that I mean supercritical CO2 extraction of peanut. Massive roasted peanut flavor in a couple of drops. Perhaps we need to do that with pecan.

Yeah - can't recall the last time I cleaned it with water - might have been for a video so it would look purdy!

I turn my HVLP upside down over a paper towel, put my finger over the needle and pull the trigger - cocoa butter refluxes back up and flows out onto the paper towel. I also blow hot air with the heat gun into the cup and repeat the refluxing. Then wipe the inside of the cup with paper towel. I will also just spray hot air through the gun. If it has gotten too disgusting - then I might spray really really hot water through it.
