Well - the two main causes for that look are poor temper and improper cooling.

Try popping in the fridge as soon as it starts to lose shine around the edges

Are you popping them into the fridge for 15 minutes or so while they are at the point of rapid crystallization?

More food saver containers. Not sure how well the seal holds in the freezer. This is the one that intrigued me when I first saw it a few years back. More here. Again - not sure about the seal in the freezer. And vaculids which also fit on standard stainless containers. -
I just drove mine in to the depot and left with a replacement when they couldn’t fix

I think with aW readings that low - and refrigeration after making - that you are quite right that what you are doing is safe. I'm a little uncertain where she got her information about the dangers of cooling and rewarming but in my years as the shelf life tutor of Ecole Chocolat - I don't recall teaching anyone that. So if you want to pull rank - tell her the old broad with more than 25 years experience says it's fine. -

Starting to think about what I'm going to need to pack for this trip. I'll bring an EZtemper for the group to use, but wonder if there is anyone coming who is planning to take an EZtemper home so I can determine how big a suitcase I'm going to need. I'll bring some dipping forks. -
Anna and I prefer to do things differently than anyone else at Eggfests! They certainly do look like wrappers and it would make sense at an eggfest to use something premade and fast like that.

It looks like this years Toronto Eggfest might turn out to be a bust. Just got a notice this morning saying that it is only five weeks away and it does not appear that they are actually using cooks. They’re going to cater it? Not quite sure how that’s gonna play out. Unfortunately having left it so late to organize I’m not available anyway.
