  3. I have seen the term "crema coffee" in the marketing copy for many espresso machines that I have been reading about lately. Can somebody please tell me what “crema coffee” is? I know what crema is, but I’m wondering what this “crema coffee” is all about. Is it just an attractive marketing term for espresso?? By the way, I’m a coffee lover but a novice coffee geek.     A good cut for braising. One of the cuts of featured in the 7 bone is the chuck underblade steak a/k/a chicken steak/minute steak.   7. I was raised eating this cut of beef. It was always prepared braised and I LOVE the connective tissue that runs through the middle. It becomes nice an gelatinous in long, moist cooking. I can see how the average diner would freak if you served a grilled or sauteed chicken steak (a/k/a chuck underblade steak) without removing the connective tissue. I agree that it does have an excellent deep beefy flavor.
  8. I always wondered why there is so little mention of them in the US. There's a restaurant (CLICK HERE) in Fort Lauderdale that has been proudly serving them for 15+ years. The late owner Mike Hurst loved them and felt that their uniqueness would make them a great seller. He was right. The place is PACKED with tourists year-round, most likely due to its proximity to many hotels, not its food. DISCLAIMER : I am not recommending this restaurant

  10. So I am here to report back on my dining experiences in Sanibel/Captiva and Naples. Or at least what I can remember. Sanibel/Captiva After 9 Sanibel/Captiva shuts down almost completely. The only thing open late is the Lazy Flamingo. We got a late start and by the time we were driving to most of the restaurants discussed on this thread in Sanibel/Captiva, they were all closed except the Lazy Flamingo and the Bubble Room. I drove the entire barrier island(s) and nothing else was open. The Lazy Flamingo was your typical Floridian seaside restaurant/bar. You place your order when you walk in and they ring a bell when your food is ready to be picked up. No servers. I had a grouper sandwich - I'd say it was slightly better than the average ubiquitous Southwest Florida Grouper sandwich. My wife had a burger, which was tasty, and a very large portion. Conch fritters were fried balls of batter lacking conch. The place has a nice mellow atmosphere and certainly doesn't feel touristy at all. Naples Tommy Bahama Restaurant - Now I am not sure if this qualifies as a theme restaurant; being in the same category as Planet Hollywood and Rainforest Cafe. If it does, then I like theme restaurants. It's situated in the middle of a retail clothing store. The pulled pork sandwich was simply divine. Served with fried yuca chips, something more commonly seen in Southeast Florida and tropical fruit and cabbage slaw. Sushi at Fujiyama wasn’t as successful. Actually, it was probably some of the worst sushi I have ever had. On top of that it was overpriced. I was shocked to find that no locally caught fish were even on the fresh fish menu. It was recommended to me by someone who is not a foodie and eats rice-a-roni out of the pot nightly. I guess I’m partly responsible for taking the advice of a Neanderthal..
  11. Jason, Matouk hot sauce is quite common at caribbean restaurants in South Florida. I like: Huy Fong Chili Garlic Cholula good old Crystal Louisiana Hot Sauce (nice and vinegary and great for buffalo wing sauce)
  12. I agree with Tommy on the oysters. I live in South Florida and have dined at the Sawgrass Mills mall location (shopping mecca) of Legal Seafoods. Their selection of oyster is the best in the area. Almost everyone here has oysters from apalachicola (sp?) and only the upscale joints have blue points. I think it is one of the better chain restaurants. Not quite up there with Houston's, but not too far behind.

    Fresh Market

    I have visited the Pembroke Pines outpost of the Fresh Market several times. I'm not overly impressed. The meats look slightly better than what Publix has to offer. Rather than saying they look better in quality, I'd say that they are cut heartier -- it's the same USDA Choice AFAIK. The only item on the seafood counter that ever caught my eye was WILD copper river salmon. In South Florida (like anywhere else), most of the salmon is farm-raised. In comparison with Whole Foods I'd say that Whole Foods wins on seafood. I have had a few of their prepared sandwiches - mediocre. Their wine selection is decent, however, South Florida Publix branches have stepped up the competition (especially the 52nd & Sheridan Hollywood location). Their produce selection leaves alot to be desired, with the exception of the occasional interesting item like brussel sprouts still attached to the bark they grown. that's my 2 cents Rich

  17. I'll be spending a long weekend in Southwest Florida soon and was wondering if anybody had suggestions on where to dine in both the Sanibel/Captiva & Naples/Marco areas. I'm willing to drive a fair amount for a good meal. I eat everything. Any good experiences you have had - ethnic, fine dining - whatever. Thanks in advance! Ironically, I live in Southeast Florida but don't any good spots on the other side. Thanks, Rich
  18. Wilton Manors definitely seems to have 'gay restaurants'. I have visited Galanga in Wilton Manors a few times and enjoyed it. As a heterosexual male, it certainly feels like I am in a 'gay restaurant' when I dine there. Have you been there, Plax? The sushi is surprisingly good for a sushi/thai combo restaurant. Rich
  19. JackFruit is available at several Carribean restaurants in South Florida. It's also sold canned at some West Indian markets here. You'll occasionally find it fresh at The Swap Shop Farmers Market.

  23. I've never eaten Applebee's Riblets but posted about them a while back to satisfy my brother's curiosity. He's a pork maven and actually likes them. Are they that gross in your opinion? Please fill me in. Applebee's Riblet Thread Rich
