  1. I like my hamburger to be a fatty mix, too. I really like a ground brisket cut, sometimes I mix it with stew meat, ground twice. I like it best with a touch of coarse salt or some balsamic vinegar. But, wow, even a 1/3 pound burger is too big for me! I make about 6 to the pound. I eat my burger raw. In public,or around guests, I like them rare, charred on the outside, bloody in the middle. I also like to add an onion or two to the grind. That makes such a delicious, juicy and aromatic burger, to me.

  3. Yay, it's FABBY! Honey, that's the fattest little zucchini I've ever seen, save the seeds and we'll market them! Well, OK, maybe it's NOT a zucchini, but it sure looks like one to me. Perhaps my meds are making my eyes buggy. Oh, and BTW, no fair cleaning the refrigerator BEFORE the reveal!
  4. I have a LOT of favorite dips for fries: any soup, any vinegar, a reduction of red wine and butter, hummous tahine, A1 Steak Sauce(OK, I haven't done that in years, but I USED to!),green hot sauce, chimichurri sauce or home made gravy-any kind!
  5. Yebra! First, they're so easy to make; second, there is a definite 'zen/zone' thing you get going on when you roll a lot of them at one time; third, they're the food of heaven; fourth, one can never tire of this dish; lastly, and a very important point-they freeze beautifully!

  7. I've had health issues for 17 years before I was diagnosed with cancer. I haven't eaten farmed fish in over 15 years, and yet, I've had plenty of wild salmon that was smoked! I've lived in a lot of places, visited a lot of places, and yet never been to Seattle. I'd say that if you're coming to visit ME (I'll be in Radiation/Oncology at Sloan-Kettering, on the 4th floor!), you should bring the Salumi stuff, if you're going to visit someone who isn't such a foodie, stick with smoked salmon. At least it will be a predictable/commonly accepted Seattle item! Rebecca I have to totally disagree....the smoked salmon that most of the world gets is FARMED salmon and not the same as ours at all. If they are from Seattle and I'm visiting I also bring copies of Seattle magazine which people like. ←

  9. This is the first time in many a moon that I have missed my old life as a denizen of the Miami Beach social scene. BartonG parties RULE! Thanks, for your amazing blog. I enjoyed your vacation immensely, it brought back happy memories of our trips wth Kiddle at that age. I've spent hours reminiscing about great summers past since seeing your photos and reading your posts this week. I think that you and Ellen and PJ make a great combo, charm, charm and charm!   10. Not that I don't give props to the smoked salmon, 'cause believe me, when I'm feeling up to eating, I do adore a decent amount of the salty, velvety stuff! It's just that well, geez, you're talking SEATTLE! I can get decent smoked salmon almost anywhere, I CAN'T as easily get something from Salumi, and they're pretty much the tops. I'd rather have something unique to Seattle, like a gift from Salumi, than a smoked salmon.
  11. I'd want a salami from Salumi(or some other cured meat) if someone was offering.
  12. Shabbat Shalom, everyone. My daughter is away for the week at camp. I've gotten a challah, and I'll have some chicken soup tonight. I may not be posting much for awhile, but you're all wonderful, you're all in my prayers, and I'll be visiting this thread every Shabbat, to share on the internet in your wonderful Shabbat meals.
  13. Every time I see a photo of your wife I can't stop thinking to myself "What gorgeous teeth!". I have no idea why, of course. PJ is way too cute for his own good, I'll wager.
  14. I've been collecting them for years. They're super useful, and cute, too! By the way, THIS is what I use in my dishwasher for the little buggers!
  15. In my humble cupcake producing opinion, Magnolia makes a far too sugary, cloyingly sweet buttercream, and their cupcakes tend to be mushy as well. Making a decent home made cupcake that I described costs me about 80 cents a piece, so 2 bucks seemed pretty good to me. But what do I know, I use cheap butter and raw sugar, I'm just a home cook, not a pro!
  16. I'm an East Coast girl, but I think that you can get those prices easily. I've happily paid more 4 dollars for a decent cupcake, and it wasn't one of those oversugared 'boutique' type products, and I'm not a fancy pants, either. Well, OK, I AM a fancy pants, but not the monied type!
  17. Gee, Chad, I have to liken your diatribe about Cutco to Tom Cruise's Scientology related tirade on Psychology. I may not be an expert on knives, but the one lone Cutco in my collection is actually a pretty good knife, after 15 years of use! I'm too cheap to buy them new(I'd rather spend the dough on a Kyocera Ceramic) but if you can find them on eBay cheap or at garage sales, etc. have at it, I say! They are light years better than "the no-name stamped garbage you can buy at any grocery store".
  18. In an ideal world, the perfect cupcake is a huge one, made with cake flour and real flavorings and butter, covered in French buttercream. Charge at least 2 dollars for one of THOSE. I'll pay the shipping too.

  21. More than anything, more than my own small worries and my own small life, I pray for peace for all of us. Thanks, everyone, for your warm thoughts. I feel better knowing that I know people like you, even just online, through eGullet. I wish for everyone good things.
  22. During this sad time there are some bright spots in our lives. My #1 boy has been with us for the last 2 weeks. Tonight HE cooked Shabbat dinner for us! Our menu : Roasted Chicken Roasted Potatoes, Carrots and String Beans Baby Mixed Greens Seared Tuna Salomon's Bakery Challah Sugar Frosted Bow Ties and fresh New Jersey Peaches for dessert. I only ate a tiny bit(OK a whole piece of chicken! ), but it is all delicious. We're hoping that he can take some time off of school and return for the nine weeks of total skin electron beam radiation that I'll be attempting at Sloan-Kettering. Well, I'm REALLY hoping. I pray for all of us the world over during these especially trying times. Shabbat Shalom
