Today's meal. Coleslaw( no pic) frozen fish fillets( English style, so says the box) Cook's Illustrated Stovetop Mac and Cheese Roasted asparagus Strawberry crisp w/ ice cream Frozen Fish fillets were on sale for 3.99 box. I decided to get buy them because I've never made the Seniors fish and I'd heard thru the grapevine that another cook served them and they were well received. To round it out, I made homeade mac and cheese and fresh roasted asparagus. I also used fresh strawberries to make a "crisp". That recipe came from The Cake Mix Doctor. It was simple, just berries, cake mix( I used an organic one) and butter. I think everyone liked it. I'm not sure though because no one said anything to me. I had 4 takeouts and 28 people sitting. I was told to cook for 40 so of course I'm now over budget. Honestly, I'm getting pretty burnt out from this job. I know this because I dont feel like putting much effort into the meals anymore. I'm making Ham next time because I bought it on sale for 1.49lb( froze it) and its easy and they love it( and won't complain) For their Easter meal, the cook who filled in for me, made scalloped potatoes with cream of mushroom soup( they loved it, or so I heard). I make them with heavy cream and chicken stock and I hear nothing!! The thing is, I know I'm a good cook and baker( I have people calling requesting my baked goods at my other job), but its really frustrating to hear nothing but complaints. Maybe my skin isnt thick enough for this job.

I've been making the Ina Garten Choc. cupcake( with peanut butter frosting) at work. They've been selling great!! I'll make a bunch and freeze them and then we'll take them out as needed.

What Food Tastes Like with Little Sense of Taste
CaliPoutine replied to a topic in Food Traditions & Culture
My boss( a chef/caterer) has no sense of smell or taste. Its been this way for about 8 months. He's seen a ENT doctor and now he's waiting to see an allergist. I feel really, really bad for him. He's constantly asking one of us to taste what he prepares. I had a horrible cold 2 weeks ago and got a taste of what he's going thru. It made me feel even more sorry for him. -
Wow, thats nice!! Ebay purchase?

I can tell that it's also a B to clean! I don't worry about it as at the high temps I use to grill a steak the nasties are bound to be cremated! ← I have the LC skinny grill( came free with the dutch oven). I don't do dishes in my house, but my spouse says its a pain in the arse to clean!! I currently use Cuisinart Griddler and those grill plates are a dream to clean( so says my spouse)

I checked this out of the library. I want to make EVERYTHING!!

I'm also baking to sell. I baked a batch of CC cookies from the book " The best of better baking.com". They spread way too much to sell( maybe I made them too big). I was aiming for a big cookie( ala starbucks) Which recipe do you think would give me a big yet sturdy cookie that would keep well for 2 days?

The Fat Pack Wonders if It's Time to Slim Down
CaliPoutine replied to a topic in Food Traditions & Culture
We even have a whole week's( 3 person blog) devoted to it. ( hint, hint) I was diagnosed with type 2 diabetes about 7 years ago. I went from glucose intolerance to full blown diabetes in less than a year. 2 years ago I started a new medication used to treat type 2 called Byetta. The main side effect( which to me was fantastic) was weight loss. Byetta prolongs gastric empyting so you stay full longer( I can eat breakfast at 8 and I'm still full at 1pm) and you need a lot less food. The weight started falling off and looking back, its shocking to me because I never thought I ate huge portions to begin with. If you look back thru our last food blog, I think the biggest thing to weight loss is portion control and exercise. Its really that simple. -
How exciting that you're blogging. Coincindentally I just bought a can of Illy coffee to bring back( I'm currently in Ft. Lauderdale) for my (same sex) spouse Robin. I've heard great things about that coffee and I've wanted her to try it for awhile now. Ernie is sooooo cute!! I've always wanted a parrot, does he fly around the house?

Did I read that right? No more Rancho Gordo at the Ferry Plaza Farmers' Market? Not even on Saturdays? I can't tell you how many directives I have received to visit your booth, and now that I am coming to SF in mid-April, I hear this? May have to rethink the entire visit... Seriously, though, might one of your special appearances happen to be on April 19? edited to fix typo in date of visit ← The booth and the product are still there -- more than aptly manned by his trusty side-kick, Joan. But the Man Himself, Steve Sando, I believe is now taking weekends off after working 7-days a week for the past five or six years... ← Many thanks for the clarification. While it would have been great to meet Mr Bean (sorry, couldn't resist) himself, I'm sure Joan can help us out. ← Wow, I guess it was my lucky day back in September when I met Steve on a Saturday.

eG Foodblog: smallworld - Spring in Tokyo

Hmmm, I thought the word "snap" was a Canadian thing since I heard it a lot when I first moved here. Its like when two people say(or do) the same thing at the same time. I guess in Helen's case, its because she's eating the same breakfast as you. -
Anything new or interesting? I'm heading down on Tuesday for a week!!

Someone, I'm not sure who donated this book to the eG heartland gathering last year. I picked it up and its great. I've made the pulled pork and some of the soups( although I'm sure its getting warmer now in NO). It has pretty good reviews on Amazon. eta: See, I've found this to not be true. The author of the book above, even says it doesnt really hurt to lift the lid and give things a stir. I do that frequently, and I dont notice any loss of taste or texture.

double sigh!! Btw, I used to think I loved California Strawberries, but Ontario strawberries rock!! They're so juicy and sweet( but a bit small). I made the most kick arse strawberry jam last year, I wish I could remember the recipe. I'll take an Ontario strawberry over a US strawberry any day!! -
I wrap each beet in some foil and roast them for about 30-45min. Wait until they're cooled and then peel them. I love making a salad with goat cheese and orange, maybe some toasted pecans too. Drizzle with a bit of Evoo and some sherry vinegar.

Have you ever been to Zingerman's( in Ann Arbor, MI)? The highest price bread they carry is about $14.00. Many of their loaves sell for over 5.50. I first heard about the flour increase last November when I was there trying to buy their 3.50 monthly special bread. I was told by the salesguy that flour has increased drastically in price,so they werent doing a " Bread of the Month" special, etc. I then made my way to Great Harvest Bread Company and was told the same thing about flour. The supermarket price on flour had not yet increased so I stocked up on a few bags before returning to Ontario and am now baking my way thru "Artisan Bread in 5 Min a day". Btw, we have a local mill near London, ON and I've yet to see the price increase there. I've recently started a new job as a pastry chef and my employer uses this flour exclusively. I expect the price to increase any day now as I just saw a news story the other day about wheat shortages in Canada. eta: I just checked the prices at Arva, and organic flour is 16.95 for 10kg(22lbs). Of course, shipping would probably be outrageously expensive!!

I'd never heard of this magazine until I moved to small town Ontario. I swiped a couple from the dr's office( yeah, yeah, bad me) but then tossed them aside until I started my Cooking for Senior'sjob. Eg member Marmish also sent me a whole whack of them because of my job. Because I live in rural small town Ontario, these are perfect for my Seniors. In fact, one of the " Field Editor's" is actually from my town. I know here and asked her what does it take to be a feild editor. She said " She needs to send in a recipe here and there". Now, before I plan the next Senior meal, I look thru the stack of magazines I've collected, the 7 books I bought( hey, they were on sale for 5.00 each) and the website. The last few meals I've cooked for The Seniors, have been from TOH. I also found a great cupcake recipe( chocolate w/cheesecake filling) for my own use ( from scratch too) that I've made now more than a few times. I actually bought a subscription too, but I havent received the last 2 issues of the magazine. Their customer service is HORRIBLE, but I guess with only 7 paid people, I shouldnt expect too much.

I was {} close to buying a pannetone the other day that was on clearance for 2.90 . My first thought was French Toast but then I seemed to remember hearing about an anise flavor ( which I hate) in pannetone. Did it make good french toast? What are the flavors?

Welcome to Food Blogging!! I'm an American Expat in your home country. I too sometimes say negative things about Canada, but I honestly don't think I could move back to California after living here( I dont miss the crime or the traffic). Btw, I'd never heard of a panzarotti until I moved here. I was very familar with calzone's though. I think the difference is that a calzone has ricotta( at least mine do as does every calzone I've ever had at a restaurant) and a panzarotti doesnt. To me, a panzarotti is like a folded pizza. -
David Ross' recipe works great without the pastry. (I wasn't trying to be traditional, I'm just lazy and my efforts at making pastry are always dismal, so I left it out). Absolutely delicious, nonetheless. I think it's the cherry brandy. ← Wow, that looks so good!! I want a bite NOW!!

Did anyone save this recipe from the blog 'floatingnib'? I tried this last summer and it was fantastic but only bookmarked the website and now the blog is no longer available! Help!! This was _amazing_ banana bread!! Thanks! ← You might try PMing the member and see if he'll give it to you.
