  1. "give a girl a break" If you want people to stop holding your hand, be a better cook. That's it. You can't hold someone's hand if they're a mile aheahd of you. Stop referring to yourself as a girl... It sounds like you have a lot of industry experiance- so just take the time and prove it. All anybody cares about is weather you can get your work done.

  6. This year I can't find Everclear in New York. I'm using Devil's Spring...it's 160 proof "vodka". From what I can tell it's just fancied up grain alc. Why can they sell this in nyc but not everclear? Anyway, my nuts are in, plus vanilla beans. I'll add the other stuff later don't want the spices too powerful. An extraction question for the experts: Will more liquid help extract more flavor? or is "just to cover" just fine? I have the nuts "just covered" but if they need to swim or if they have enough "power" to infuse more liquid...do tell... thanks, e

  10. Can you go to Chikalicious and just have a meal of perfect desserts? I don't know an eleven year old who wouldn't like that. you'll also look like the coolest dad in the world for taking her to the East Village insted of the Upper East side.
  11. Is this meant to be a fancy lunch or something more casual? Chris Brobergs desserts at Cafe Gray at real showstoppers. Jean Georges also has "fun desserts" I've never been to David Burke and Donatella but have heard singing on the wind about a cheesecake lollipop tree....

  14. NOOOOOOO!!!!!!! Please ignore Fat Guy and if you really love crabs, please, don't go to City Crab. The crab is not fresh seeming or cooked to order-ish it seems very frozen yucky, yick. City Crab in the same restaurant group (Flatiron) as such jems as Chat and Chew, Dukes, French Roast and Steak Frites...It's not very high quality food, marketed to people wo don't know better... Why FG? Why? I liked Sidewalkers....

  16. I really love lamb belly, but unfortunaetly neither place has it right yet....It really should have all the attributes of pork belly but the flavor of lamb. Both place are ending up with a sort of bouncy rubbery texture....
  17. This happened at my last bbq. I told my dad he could invite whoever he wanted (so he invited 15 people and didn't mention it to me until the morening of the event) "dad you know bbq takes 18 hours to cook right?" "yeah" "um" "OH....hmmm, we'll have plenty...and did I tell you Daniel is coming over, wouldn't that be cool! he loves bbq!" Yes, folks, Daniel Boulud. He didn't show... but it was a white knuckle ride for the first few hours. It would have been what I cooked had he been a guest anyway but even more soignee.
  18. HA-LAY-LOO YA SISTER! My evil twin is going to school now. She's decided she wants to explore here professional cooking side ? My story is a bit of a miracle story. Went to school, worked the line, moved to a food magazine as an assistant editor, I've just started doing some multi-media stuff within the company... I can pay my rent too. I don't think I can say the same thing for most of my cook friends. Not everyone wanted my dream though, some people really do want something less "glitzy" or public. Unfortunately, some people (my sister for example) see my success and think it's easy to do what I've done. It took a lot of work. An enormous amount, and just as much luck. I feel blessed. People should enter any profession excited- but wary. I used to watch a hell of a lot of ER but I didn't consider med school....
  19. I second pavlova! insted of whipped cream you could make a vanilla pudding with splenda as sweetener? lots of fresh fruit on top... the only real sugar would be in the meringue...
  20. Muncho's were my fist junk food snack.... Ever. Thank you babysitter. That's right, folks, I'm hardwired to love, need and crave Mucho's for the rest of my existance.
  21. At the risk of being libelous or just flat-out incorrect, I could have sworn that these beans tasted like Liquid Smoke. Someone please correct me if I'm wrong. I hope I am. For me there was that distinct aftertaste. ← me non!!!! but I'm not that versed on the liquid smoke flavor... bah... they were so goooood. They were really somkey ...I hope not.
  22. If you didn't try the beans from Bakers you very seriously missed out. They were very, very smokey with no bitterness at all- and so smooth. I could have eaten many more of these.
  23. Find a way to clear your name. New York is a small town. Really though, you like this place, you go there a lot- go in and pay cash on the spot, for a night of drinks- then address it next time you're back in.
  24. I think I had a FG sighting too but yes...how do you ask? I'm usually not shy but today....of all days... Ed Mitchell is king. It was also nice to see Chris Lily even though I didn't have room for his 'cue. The line situation wasn't bad. They sold out of big dawg passes though.
