    Paul, the steak was Sous Vide at 55C for 25 min with a Teriyaki marinade and then quickly seared in a cast iron pan. Scotty, nice ballotine. Did you "glue" the skin? How did you brown the skin? Bruce. I might have to grill that 5 spice chicken tonight.

    If it tastes half as good as it looks, you should win the competition! Break a leg. If it is a KCBS competition, let me know if they need a KCBS judge ;-) Here are some ribs and brisket I picked up for dinner one day. Not made myself, but delicious nonetheless. Another dinner... Fried Rice w/Steak robirdstx, great looking Carnitas.

    Patrick, The khoresh(t) looks amazing. I should make some khoresh as I can see them being the roots of many of the Indo-Persian (Parsi) dishes I am familiar with. Do you recommend any cookbooks? Which one(s) are you using? How did you pulverize the saffron? In a mortar and pestle?

    Terrific meals all ! PrawnCracker, that lobster dish makes me crave Alphonso mangoes. Dayboat Scallop Crudo Steak (Sirloin Flap), chimichurri, Scallops and vegies.
  10. Great posts all ! I am craving some breakfast and it is 4pm Elizabeth, would love to see the step by step instructions on the bagel. My fresh bagel experience is limited to the 2 places by my house that make them everyday. On Sundays we usually go out for breakfast. A recent tradition is frequenting this small place that only serves breakfast and a line quickly forms outside once the 25 or so seats are taken. The last time we were there, I got a Cheesesteak omelete, impossible to finish in one sitting, so the leftovers became a sandwich. Cheesesteak Omelet Sandwich Today it was Chorizo, Eggs and potato hash w/salsa I cooked the egg sunny side up in the same pan I browned the Chorizo. I find that you can cook the whites all the way through by just leaving the egg in the pan slightly longer. The benefit will be that the edges will crisp up as well.
  11. Great Brisket Kay. Excellent looking bacon Kim. I applaud you for attempting making bagels at home, I would fail miserably. Here is a breakfast from a few weeks ago.... Parsi Sali per Edu (Spiced eggs on potato sticks).

    Kim, beautiful Pork chops and great idea for the "Mexican Pho" The "bacon base" is very easy - simply cut your favorite back strips into 1/4 in pieces, place in hamburger mold and top with ground beef. Lightly pack it together and sear bacon side down in a cast iron pan. Optionally you can put a layer of cheese between the bacon and burger. I got the idea from a place featured on Triple D (Diners, Drive-ins and Dives) on Food Network. Enjoy! Cheers Percy

  14. Haven't seen them this year in the US yet but hear they are selling at about $36/dozen. In previous years I have bought them for as high as $120/dozen.

    Made some burgers in a cast iron skillet. The base of the burger was bacon pieces and the burger was stuffed with cheese and onions.

Soba, if you are on vacation, you should do a blog again Country Sausage and Fried Egg on an English Muffin - from a restaurant who makes its own English Muffins - dense and crispy on the outside yet fluffy and yeasty on the inside.     Kate, you had me at Yuzu marmalade. Is that homemade (I have never seen it in the US)? Delicious looking salad. Justin, welcome to the thread. A few days ago, dinner was: Harissa Lamb Burgers w/tzatziki, feta and roasted garlic on a multi-grain ciabatta roll. The meat was a bit more rare than this picture suggests.
  24. Soba, that Turkey egg dish is a piece of art. Bruce, that shirred egg looks awesome! Leftover breakfast sandwich - Egg, ham and cheese between two slices of Texas french toast. Delicious with maple syrup on it - yummmmy.
