  1. Here's what Ed posted in the original thread: For an excellent banquet I'd be willing to spend between $60 to $80, but draw the line at an extra $100 for a single item. Note that Ed, the acknowleged expert on this states that quality does not change much past the $40/$50 range. Will PM/Email Ed to let him know this idea is still alive. For the record I'd like to reserve 2 spaces for the event if it happens, my Bro's antennae went up while lurking over this...

  3. Monkee Hill, overlooking Marine Park from the back deck of the Union House in Red Bank from '91 - '93. More of a cheesy, seasonal Tiki Bar than a restaurant it had the most diverse clientele of any place I'd ever been, and I'm not normally one to hang out in bars. Thank god it was only seasonal or I would not likely have survived. It was some of the best times in my life...

The "Beer Can Chicken" method of roasting has been extensively tested and evaluated on the various BBQ/Smoking mailing lists, and the overall consensus was that it may add moisture from the beer, but any additional flavor from the beer or any herbs, spices or other flavorings added to it had little if no impact on the flavor. The vertical roasting rack did seem to speed the cooking and provide a more even roasting as it allowed more circulation of heat/smoke within the cavity.
  13. Right, I'd argue--most salads in Thailand are crazy overdressed by Western standards, probably because the dressing has no oil. Not to mention that you can then use your rice to soak it up!

  17. I use ground coriander seed along with cumin and black pepper to season a marinade of soy sauce, rice vinegar, toasted sesame oil and minced garlic and scallion for beef satay. Skewar and grill, serve with a spicy peanut diping sauce.
  18. Maybe so, but in principle, it's not that different. It's very different. Irradiation uses ionizing radiation that destroys the DNA of living organizms, thus killing them, but does not heat or "cook" the product being irradiated. Microwaving food simply heats the product, often in irregular patterns (which is why many have added the turntable do-hickeys). As a result, areas that do not get heated enough to kill bacteria can still be contaminated. I've read that any organizms smaller than the wavelenth of the microwaves (About 3 millimeters, the size of a small ant) are not affected by them.

    Since the chile pepper was not introduced to the Indian subcontinent until the 16th century it can be argued that any dishes using them could not be considered "authentic."

    Olives

    I can never seem to keep olives around long enough to worry about them getting old... Anyone else notice the apparent racial bias among canned olives? The green ones are arranged in nice patterns and shown off in fancy glass jars while the black ones are unceremoniously dumped into tin cans...
