  1. This vineyard is on a trellis system so we want the vine to grow up into the wires. It's really a matter of trail and error with this vineyard as it was not well cared for in the past. Judgment call as to which is the dominant came. Should come out from the top rather than the side or bottom of the vine. 2-3 buds max to get the best quality grapes. You sometimes come through later in the season and thin the grapes. Quality of the grapes not quantity is the ideal. Keep asking questions and I'll do my best to answer them.
  2. And then we are done. We try to get one cane per spur with 2 buds. We want the bud to be upward facing so it will grow toward the wires. Cane's should be about 6" apart on the main plant.

    Not really, Keith, but only because the yeast strains introduced to the milk are what give cheeses unique flavors. So the analogy doesn't work. Specific grapes are used to make specific wine. ← As are the yeasts used to make the wines.

    Corkage fees

    If I get charged corkage in Sonoma, I don't eat there any more. I might bring a special bottle once in a while, but the last time I was charged (by the owner telling the waitress) I had free wine for 2 months from the staff. I eat at your place all the time and I can't bring a bottle once in a while, Duh. But that's only in town. I expect to be charged a reasonable price elsewhere but $25, give me a break, Especially if I order one of your overpriced bottles also. I do have my own glasses and I carry a corkscrew, if needed.

  13. The words custom and expensive come to mind. Do you have a woodshop, not tools, a shop and the skills? It's worse than kitchen cabinets.

  15. Copper lined with Stainless is the best for Fry, Saute, Saucière pans because of the heat control. But is also the most expensive. SS with Aluminum is the next best. I have a lot of both and expect it will all outlive me. SS by it self is the worst thing you could ever buy, uneven heat, prone to scorching. Nonstick is useless in my opinion except for Eggs and camping (easy clean up). But then thats me. Buy it once and buy it right. Spent a lot on junk before I learned that.

    We have a bunch around here and it's Gamey and very good. Worth eating but not wild boar anymore like you can get in Europe. But they have the same problem with interbreeding now.

    Bad Home Cookin'

    Grey, dry, stringy lamb with mint jelly. Later in life she came to visit and I made her a boneless, BBQ, marinated leg and she asked what it was. When I told her it was lamb she apologized for all those years.
