    Tuna Salad

    Canned solid white tuna, mayonnaise, lemon juice, hot sauce, freshly ground black pepper, and chopped sweet onion. Also with mayonnaise, chopped sweet onion, and horseradish.

  5. I like blending frozen bananas with lowfat milk, vanilla extract, and a touch of maple syrup. Sometimes I dust it with a little cinnamon. Makes a very thick, lowfat "blizzard" or a lowfat milk shake, depending on how thick I make it.

  10. Does Chocolate Extract boost the flavor in chocolate baked goods? I usually add a little instant espresso to kick up the chocolate flavor, but was wondering if the extract works in a similar way.

  12. Steamed Mussels with sauteed garlic and shallots in butter with dry white wine. Broiled salmon with marinade of garlic, chopped cilantro, lime juice, and olive oil. Penne with sauteed garlic in extra virgin olive oil, julienned bell peppers added, along with dry white wine, simmered until peppers are meltingly soft. Pan-fried Trout in butter/oil with glaze of caramelized scallions and white wine. Baked or Roasted tomatoes stuffed with blue cheese and/or Parmigiano Reggiano, topped with melted butter or extra virgin olive oil, breadcrumbs and herbs. Bruschetta with garlic, tomatoes, basil, extra virgin olive oil.

    That's for a side dish or first course. I usually do 4 oz per person for a main dish.
  18. I do mine with the leaves and stems, garlic, walnuts, Parmigiano Reggiano, extra virgin olive oil, salt, and lemon juice, and don't experience any bitterness. The added citrus makes a world of difference - it really picks it up.
  19. Deviled Eggs with black caviar or black pepper. Stuffed yellow cherry tomatoes or stuffed mini yellow peppers with black beans, cheese, etc. Stuffed potato skins with sour cream, melted yellow cheddar and sliced black olives. Nachos with yellow tortilla chips, black beans, cheddar, etc. Yellow popcorn with melted cheddar and black pepper. Mini yellow cupcakes with dark chocolate frosting (black or Dutched cocoa or bittersweet chocolate with espresso added). Mini cheesecakes with dark chocolate glaze.
  20. Honeybells are great - I used to buy them from the grove next door when I lived in FL several years ago .
  21. Loose Leaf Mint tea for an upset stomach. Lemon Zinger for a sore throat.
  22. Bionaturae and authentic San Marzano tomatoes have very little added salt, as compared to the high amount in Muir Glen, etc. You may want to check them out.
  23. Bionaturae Organic Whole Tomatoes from Tuscany - Love these, and prefer them over the several brands of DOP San Marzano tomatoes I've tried.
