  1. Equal amounts Dutch Processed cocoa and sugar, about 7 x milk to cocoa powder, a little espresso powder, a little cinnamon, and vanilla extract.
  2. These two recipes sound interesting: Chocolate Grand Marnier Souffles with Black Walnut Caramel Sauce http://www.foodnetwork.com/recipes/the-best-of/chocolate-grand-marnier-souffles-with-black-walnut-caramel-sauce-recipe/index.html Caramelized Black Walnut Bread http://www.cookingbread.com/classes/class_caramelized_black_walnut_bread.html
  3. So glad you liked the soup - it's one of my favorites. I usually puree half and leave the other half chunky.

    Apple Crisp

For the topping: Dark brown sugar, cinnamon, flour, pinch of salt, pinch of nutmeg, and butter - no oats. Apples vary, depending on the quality. I've used Jonagold, McIntosh, and Golden Delicious, sometimes a combination.
  5. Anthony, Here's an article on how to calculate the cocoa solids and cocoa butter percentages: http://www.cocoacontent.com/article_percentage_matters.html
  6. Good point, Paul, about the cacao percentage including both the solids and the cocoa butter. Just to make things more difficult, right?
  7. The fat content has to be considered also, as each percentage has a different amount of fat, so the butter or other source of fat has to be adjusted. Alice Medrich's book "Bittersweet" has an excellent breakdown. You can view it online: http://books.google.com/books?id=lxrZcjX4DNwC&pg=PA349&lpg=PA349&dq=alice+medrich+and+chocolate+substitutions&source=bl&ots=87sNCtSCjn&sig=Y9QteX7rDYOKDY3pIRUOz7REpOk&hl=en&ei=g-3DSueEK8_d8QaEqPnfCQ&sa=X&oi=book_result&ct=result&resnum=6#v=onepage&q=&f=false

  14. You're on. Tomorrow. ← Just noticed a slight difference between the recipe I have, and the one on the link: the one I have uses 1/2 cup raspberry preserves - the linked one uses 3/4 cup. Also, the linked one doesn't specify to use very cold butter, sliced. I'm going to PM you the exact one I use.

  16. Looks delicious, but unfortunately for my current needs doesn't look like a candidate for freezing. But so yummy. Thanks, Merstar ← Darienne, I've frozen this with good results - not to worry.
  17. Hello Merstar, Unless I am mistaken, something is amiss here. There is no Raspberry Cream Cheese Coffee Cake at this URL, just a repeat of the Cranberry cake. ...or was this a test to see if I was paying attention or not?... ← Ha! You passed the test with flying colors! I couldn't edit my previous post, so here's a link to the recipe (couldn't find the original source, but this is the same recipe): Raspberry Cream Cheese Coffee Cake http://kellishouse.blogspot.com/2007/04/cake_18.html

  19. It certainly is appropriate with me and I shall make it at some point, if not for that weekend. Thank you. ← You're very welcome.
  20. This may not be appropriate for this particular crowd, but here's a great couscous salad - you can make it a few days ahead, storing the salad and dressing separately, then add dressing a few hours before serving. Also, add the peas with the dressing - if left overnight or longer, they lose color. Another note: I always strain out the crushed garlic from the dressing before adding to the salad: Curried Couscous Salad with Dried Cranberries http://find.myrecipes.com/recipes/recipefi...ecipe_id=226616
  21. Just a follow-up - I ordered Madagascar beans from Beanilla Trading Co. and they're excellent. Plus, ultra fast shipping and great customer service. I ordered through Amazon, but they also have their own website.
  22. Thank you all!
  23. You know, I was checking on Amazon for vanilla beans earlier today, and saw this company listed - Both the beans and the company itself had high ratings and great reviews. Thanks so much for your recommendation!
  24. I use L'epicerie www.lepicerie.com. They have always been pretty good and not excessively expensive. ← Thank you!
  25. I need a good source for vanilla beans - my source has closed shop. Thanks.
